Hi gang! Tonight’s dinner was cool and refreshing. The only “warm” part of it was the veggies!

Easy and tasty
Basic frozen broccoli and carrots that I quick hit with some hot water to take the chill off. Then in a pot I heated up a small amount of olive oil and quick sauteed some red pepper flakes. Added in the veggies, some grated garlic, S&P, and some Italian seasoning and let it cook for about two minutes. Then I tossed in some grated parm and had a simple and quick side dish.

Easy and light
Also had some tuna salad which was super simple as well. Tuna, shredded carrot, almost a TBSP of olive oil mayo, spicy mustard, and horseradish. The seasonings were S&P and curry powder. A few sunflower and pumpkin seeds for extra crunch and texture.

The whole party
My whole plate! I ate the tuna salad with some Dr. Kracker’s flatbread which I only ate 1.5 pieces of and didn’t even finish that huge scoop of salad. I didn’t finish my veggies either. I was starving so we ate slightly earlier but once I started eating, I filled up really fast. Scott had leftover steak and I had a few nibbles of that as well. Easy dinner night! It wasn’t until I was eating that I realized I was on seed overload today. :p I had seeds in my salad, seeds in the tuna salad, and then seeds with the flatbread. I should be squeaky clean by tomorrow!
Totally glad the week is close to being over! A few more things to get done before SF class this evening and then my goal is to be in bed early. Hopefully that will happen!

Sarah, I love frozen fruit! Especially for pineapple which can be really expensive fresh.
