Hi guys!! Quickie post this evening! I’m dragging and am glad I don’t have anything to do tonight other than put some jammies on and relax with Scott. Well after Rocky gets an evening walk.
Lunch didn’t sit well with me and it’s my fault. First I had those two prunes then I had the fiber flax bread for lunch. Oh when will I learn my lesson that I cannot tolerate that much concentrated fiber? Lord. Finally after my stomach settled back down I could make some dinner. Scott was having leftovers, so that left only me to worry about. Since I didn’t get a fruit at lunch, I knew I needed one for dinner. And I wanted an orange. Then I remembered how well orange pairs with red onion (sounds odd I know but it’s so yummy!) and decided to make a salad off of those.
It was so pretty and almost sunshiney! I chopped up half an orange and let that sit with some slice red onion. I squeezed a little bit of the orange juice over that. The juice helps cut the strong onion flavor and mellow it out. I chopped up some grape tomatoes and let all that hang out for a bit. I made a small dressing out of mustard, red wine vinegar, and olive oil. Also in the salad is:
- Romaine
- Spinach
- Pine nuts
- Sunflower and pumpkin seeds
- Cranberries
I added the orange mixture on top and then the dressing on top of that!
Along with my salad I had the other 1/2 of the fish from Saturday night, a wee dollop of mashed potatoes, some carrot sticks, and then green beans. Frozen green beans I heated on the stove in a pot with chick broth, 1 garlic clove, a bunch of buffalo sauce, S&P. Very yummy and took on the buffalo sauce flavor!
In the middle is the rest of my orange and bread + butter for Scott. I ate everything plus one small bite of Scott’s pork roast.
Now it’s off to relax and make sure I hit the hay early tonight!

I had a small bowl of Kettle cooked chips, your dinner looks a lot healthier. Those Kettle chips are addictive!
