Hi guys! I’m going to do these recaps as best I can because my brain is a little fried.
Yesterday for lunch, I took Caitlin’s lead and made some coconut french toast! I mixed some eggs, a bit of water, coconut flakes, vanilla, and some cinnamon in a bowl and dipped in omega 3 bread. It wasn’t until after I added the vanilla that I realized I had some coconut extract and should have used that! Doh!
I had only one piece of the french toast, a fruit salad on the side and some maple syrup for dipping. The butter is for Scott. The fruit salad had bananas, apples, mango, grapes, and pineapple in it. I think I even moved over and started picking at Scott’s fruit! I did some stuff around the house and finished getting ready for the weekend. The nite portion started at 6pm. It was a little too early so that we couldn’t have a proper dinner before training. But I knew that I wouldn’t be able to go without having anything.
I had a bowl of blueberry mini wheats with some vanilla soymilk added after the pic. We headed over to the gym to get ready for training. We did all knife work which was so much fun and informative. That’s where my forearm bruises got started. Training lasted till after 9pm. Whew! We came home and walked Rocky quickly. Then we each showered and both of us were starving. I could have made something but Scott wanted to get Mexican and I went along. By this time it was after 10pm and I just wanted to eat and relax a bit before bed.
I had two enchiladas, some chips and salsa, and a couple of bites of Scott’s meal. I never remember what the name of his meal is! :p We also had a Summer Ale to accompany dinner. I’m going to have to start getting something else for my meals. Aside from all the cheese, I thought enchiladas were an okay choice. Now I know those tortillas are dipped in oil before filling and rolling. Eeep! I’ll find something else the next time we order out.
We watched TV for a bit and then it was bedtime. I didn’t get to bed until 12am. Oy!
