I was in quite the breakfast dilemma this morning. I wanted a huge yogurt and granola bowl, however my granola stock was low. It was late in the morning so I didn’t have time to make new granola.
But I really really wanted some yogurt! I just finished a weight lifting session and I needed some protein STAT.
Over on Kath Eats, I’ve seen her make smoothie bowls before but to be honest the concept never appealed to me. I didn’t really want to eat a smoothie. I like drinking my smoothies. Though today I decided to give it a try.
This way I could still have yogurt with a dash of granola and make the smoothie thicker so that it would be creamy and fluffy instead of being all liquid.
I made a HUGE bowl of it too! Here’s my version of my first smoothie in a bowl:
- 1C Unsweetened Plain Coconut Milk (the kind in the fridge section, not canned)
- 1C Uncooked Old Fashioned Oats
- 1/2-3/4C Vanilla Organic Yogurt
- 1TBSP Ground Flax
- 1 Medium Banana
- Pinch of cinnamon
Place all ingredients in a blender and blend away until smooth. Not too much because you want it to stay thick. Pour into a bowl and add the following:
- Red Delicious Apple, Chopped
- Dried, unsweetened shredded coconut
YUM! This was so so good! I made a bit too much my first try out and Scott finished what I couldn’t eat. However it really hit the spot! It was cool which was perfect for this summer morning and I got everything I was looking for.
Protein from the yogurt and oats.
Crunch from the granola.
Extra fruit from the apple and blueberries. Win win!
