The Versatile Pumpkin

To kick off Pumpkin Month, let’s talk about a few of the many ways that the amazing pumpkin can be used!

Of course there’s pumpkin pancakes!

Drizzle on some maple syrup, a little yogurt, and some pumpkin seeds and you have a mighty fine breakfast!

One of my favorite ways to enjoy pumpkin is in oatmeal!  A few scoops of pureed pumpkin while the oats cook and you’ve got mega creamy goodness.  Add in a few scoops of small curd cottage cheese and suddenly you have pumpkin cheese cake oats!  It’s creamy and decadent which is a lovely way to start or finish the day.

Okay, so sweet we know, how about savory?

Pasta not what you’re looking for?

How about some chili?  Pumpkin works great in chili!  It thickens it up without having to use a bunch of tomato paste.  You can’t even taste the pumpkin, but you do have a creamy thick chili that is perfect for a fall evening!

Hooray for pumpkin!

  1. I found Pumpkin Salsa at the North Market today. It was at that one shop where they have all the salsas and spicy sauces. I tried a sample, thought it was interesting, and just went ahead and got some. Not sure what I’m going to do with it yet, but the lady there had used it to make the pumpkin chili that she was also sampling.

  2. Jay and I just saw a recipe for pumpkin pasta sauce and we were intrigued. I’m obsessed with pumpkin (oats and pancakes are my fav!) so I’m going to have to try the pasta. Maybe with spaghetti squash? Hmmmm…

  3. I really need to try the cottage cheese in my oatmeal sometime. I tried pumpkin in chili last year and now I rarely make it without it! And pumpkin in pasta, so good! I like to use it in lasagna. Hooray for pumpkin month!!
