Pizza Thursday report for September 30th, 2010

Hi gang! How is everyone’s week going?  Ours has been busy!  We’ve been slammed with business meetings all week, either we’ve been participating in them or planning and talking about them.  Scott has had even more meetings than I have, at least two more.

By the time pizza time rolled around yesterday we were more than ready for it!  My dough however was not wanting to play along.  It was being prickly earlier in the day and when I rolled it out, I knew right away it wouldn’t be able to handle a full on pizza.  I wasn’t about to buy a pizza and I wasn’t about to toss the dough.  I did that too many times this summer already and I was determined to make this dough work.

I decided that I was going to make calzones instead!  I rolled out the dough and then cut it in half.  Each half got layered with:

  • Sauce
  • Cheese
  • Shredded Carrot
  • Red Onion
  • Broccoli

I purchased some fresh mozzarella at the store recently, so I had Scott shred it and we used that in our calzones.  The cheese was amazing and I fully expected it to be ooey and gooey.

Once everything was assembled, I sealed up the calzones and baked them at 425 for about 1/2 an hour.  Had my dough been normal, it wouldn’t have taken that long.  Probably 20 minutes most!

The cheese wasn’t quite as gooey as I hoped.  It was actually better not heated up!

The calzones were yummy but not the pizza I was hoping for.  Oh well, win some and you lose some.

Roadshow has been sort of duds lately although the one we watched last night was way better than last week’s!  But nothing to have a conversation about.

Wine for the evening was a lovely Malbec by Maipe.  It was just the right kind of dryness with a lovely spicy background.  We sipped on that while watching House Hunters.  The International episode last night was driving Scott bonkers.  The guy looking for a house was a tad annoying.  He was openly mocking the culture of Belize while looking for a house!

Then I kicked up to a nice toasty bed.  Mmmm I pulled the heating blanket out for the season and it makes the bed so amazing.

  1. I like making calzones too, though if the dough is tough, it can make the calzone tough to eat. We have made them in the pie irons over an open fire too. That’s a nice fall way to do it.
