Fillin’ the belly

Hi guys! Yesterday for Homespun Sunday the HQ was full of good eats!  We came back from the race yesterday and once I showered, it was time to get down to making some breakfast!

All I could think about were pancakes.  I have been on such a pancake kick ever since I got my new waffle maker at Christmas!  I’m not sure why but now I prefer pancakes over waffles.  Maybe it’s because I haven’t quite figured out the exact technique yet to get perfect waffles with the new machine.  Regardless, I just want some dang pancakes.

A few weeks ago I purchased some buckwheat flour out of the bulk bins at Whole Foods on a whim just to try it and get some other types of flours incorporated into our diet.  I made pancakes with it and loved it!

Brief research shows that most people find it to have an aggressive flavor and some tend to shy away from it.  I think it’s awesome and can’t wait to get more!  I also discovered that it’s pretty close to being considered a complete protein! Hooray buckwheat!

I used buckwheat and regular unbleached all-purpose flour for our pancakes yesterday.

YUM! I made huge pancakes, like the kind you would get at a restaurant.  Normally I make silver dollar sized pancakes but not yesterday.  I wanted some good old fashioned pancakes!

Blueberry and Walnut buckwheat pancakes!  There’s a bit of shredded unsweetened coconut in there as well!

As a general rule of thumb, anything that I bake or make, such as pancakes, I like to keep vegan.  While I am not a vegan, I do like my baked goods and such to be on the vegan side, therefore these pancakes are vegan. Also I don’t put “vegan” in the title of things normally.  So if I post a recipe and you want to know for sure if it’s vegan or not, look for the tags at the bottom of the post. :)

I started with two monster pancakes but only ate 1.5 of them, dipped in some maple syrup.  Some chicken breakfast sausage on the side with the fruit, OJ, and some coffee.  Fabbo Sunday Breakfast!

I lazed around the rest of the day! It doesn’t matter the mileage, racing wears me out! I took a short nap, read in bed for a bit, and then cut Scott’s hair.  He was looking crazah!  While he was cleaning up, I prepped things for dinner.

We had a most fantastic cozy romantic dinner!

Part of the dinner was a lovely mixed greens salad with:

  • Red onion
  • Carrot
  • Cherry Tomatoes
  • Cucumber
  • Sunflower Seeds
  • Goat Cheese
  • Homemade balsamic vinaigrette

I am not going into too much detail about dinner because it’s going to be it’s very own special post.  But I will give you a sneek peek!


The night concluded with some snuggles on the couch watching Holmes on Homes and eating some dessert.

Homemade Polish Nutroll!  I still have some of these awesome babies in my freezer from the holidays and yes they are still good!  Just need a slight warmup in the microwave.

  3. The nutrolls look great!! Sunday was nice – took the kids back, regained my house and slept like a log. Hit the ground running on Monday!!
