Yesterday was a bit of a different kind of Sunday here at the HQ. Since it is a holiday weekend, we treated Sunday like a regular day full of chores and today (Monday) is our rest day.
After my long runs on Sundays, I usually have a small bit of yogurt and granola. However yesterday was full of stuff that needed done so after my run I woke Scotty up and we had a big bowl of oats for breakfast. Old fashioned oats with cottage cheese and blueberries. I usually refer to this as blueberry cheesecake oats! You might think that cottage cheese in oats sounds weird but it’s awesome. It makes the oats creamy and gives you some extra protein punch.
We have been doing yard work all weekend long. Since I’ve been doing extra workouts I’ve been bumping up the protein this weekend.
Lunch was quick and easy so we could get back out in the yard. A PB sandwich with Ezek bread, smoothie, cherries, and some carrots and green peppers. There’s also some vegan nuggets on the plate but since it’s a no processed foods day, I didn’t eat them.
The smoothie had:
- Coconut milk
- Carrot Juice
- Cranberry juice
- Frozen pineapple
- Frozen mango
- Frozen banana
Dinner needed to be something I could easily toss together. Saturday night we had salmon and there was leftover. We had that with some elbow pasta and veggies in a red wine and tomato sauce.
- Whole Wheat elbows
- Yellow Squash
- Chicken andouille sausage (handmade from Whole Foods)
Sprinkle of parm on top.
So while a bit out of the norm for us, we still had a great Homespun Sun’day with meals made at home easily. How was your Sunday?

I can’t figure out if you ate the nuggets or not. And now my whole day will be ruined because I will be questioning it. Or because I’ve already seen the SATC 2 preview twice today. “How’s MY tie?” Grrr…
