January 8th, 2010: you’re my lobster

Last night while watching some hockey wine was involved.  Along with dessert.

Hello vegan chocolate pudding!  Lovely to see you! Just an aside, it’s really hard to take a nice picture of chocolate pudding.  Someone once suggested (because he didn’t like my picture :lol: ) to use whipped cream.  We don’t eat whipped cream so that trick won’t work!  If you have suggestions for making it look more appetizing, I am all ears.

I was going to possibly run today after sleeping in, but the wind kept me at home.  That and the fact that I really wasn’t ready to give up my comfy jammies just yet.  I poured myself some coffee and made a huge yogurt mess.  After a bit of time at the computer and my pulling my hair out trying to decide on how to go about organizing this house better, I went outside to shovel the walk and drive.  Then I shoveled the back deck while Rocks romped in the snow.  Okay he didn’t really romp but peed and then came back on the deck looking at me like how dare I force this coldness on him. :p

Lunch was quick, easy, and light.

A bit of tomato soup, crackers and hummus (I didn’t have much of that), chopped veggies, and a morningstar chick’n patty with BBQ sauce.  Smoothie on the side:

  • 1C Carrot juice
  • 1C Unsweetened Cranberry juice
  • 1C Water
  • Spinach
  • Banana
  • Frozen blueberries
  • Frozen pineapple

No yogurt today since I had yogurt at breakfast.

Because it was just a plain old winter day and we didn’t have anyplace we needed to be, I decided that it was date nite!  Date nite at home is not only cheaper but we can dine in our jammies which is always a plus!  I went through and put on the Christmas lights (still have decorations up) and lit some candles.  Scott put the radio on the 40s station and we hung out while dinner cooked.  Then we settled in at the table for a nice meal and conversation.

We had some lobster tails in the freezer that were originally intended to be eaten over holiday break, except we never got around to it.  Tonight was the night!  Nothing says date nite special like lobster, right?

Thawed and then roasted in a 400 degree oven for about 5 minutes or so.  They do not take long at all!  I had garlic butter for dipping and Scott had regular butter.  Garlic butter is just melted butter with a clove or two of garlic in it.  Cut the clove in half for more intense flavor.

On the side was some polenta and green beans.  First let’s talk about the polenta.

I had some leftover sundried tomato and spinach pesto that didn’t make it onto yesterday’s pizza.  Once the polenta was cooked, I added in the pesto and let it hang out.  A dash of plain soymilk and some parm completed this dish and caused the polenta to become a creamy flavorful sidedish.

The green beans were just frozen green beans that I added to a sauce I made out of onions, garlic, diced tomatoes, and white wine.  Very similar to the sauce I make for shrimp in garlic wine sauce.  It’s a great way to jazz up frozen green beans and make them a bit fancier.  If using fresh green beans, roast them first then add them to the dish.  Roasting will give them a little bit more depth, deeper color, and a little crunch as well!

This dish has a bit of nostaliga to it.  Way back when (and I mean way back, circa 1999), Scott and I used to live in Phoenixville, PA (ever hear of it?) and one night we headed to a local restaurant to give it a try.  We ended up not caring for the restaurant all that much but I had a side dish that was fabbo which was a green bean and tomato combo.  This my take on that dish.  Not too long ago Scott mentioned this dish as something we haven’t had for a while, I decided to surprise him with it this evening. :D

Dinner sure does look pretty doesn’t it?  YUM!

Fun Factoid, Phoenixville is the first place Scott and I lived together after college graduation.  He graduated a semester before me and got the apartment.  Once I graduated (in December) I packed up my shiz and headed to Eastern PA. :D  We’ve lived together since then. Oh how time flies! ;)

Alright gang, I’m off to kick it on the couch and hopefully watch an old movie accompanied by some chocolate!  Till tomorrow!

  1. I’m thinking of you as I’m sipping my red wine right now. I think guar gum or xanthan gum or perhaps a combo would help your pudding firm up. Or maybe some sexy lingerie.

  2. How do you get the lobster out of the shell? I usually cut the shell down the back and butterfly it so I can get at the meat after it’s cooked. It just pops out.

    Your dinner looks marvy.
