October 27th, 2009: too much buttah

Hi guys!   Last night after posting, I quickly made some tea (Relax Me Honey) and headed up to bed to read.

Tea

I crashed out hard at 10pm.  No foolin!  I thought for sure I would have troubles falling to sleep early but the bod was all, “Nope, let’s do this thing!”

Honestly I think it might have been something I ate.  I think the green beans had a lot of butter on them (in fact I know it) then the fakeout butter on the popcorn was just too much and it upset my tum.  I have to say it’s pretty amazing how my body responds to stuff now.  Butter is fine, too much is not and it makes my body a very unhappy camper.  Lesson learned!

I got up early this morning and started work right away.  It got light out around a quarter of 8:00, so I busted out four miles.  Wheee!  I am loving how four miles is now considered my “short” run. :D

Chocolate soymilk

I had a glass of CS, stretched, and showered.  I woke up the huns and ran downstairs to make breakfast because I was HUNGRY!

It was apple oatbran day.  I really wanted oats but I don’t even have enough oats to make a pot!  This is unacceptable!  I will have to hit the store soon, desperate times, peeps.  Desperate times.

The oatbran turned out fabbo though, creamy delicious.  After breakfast, I ran Rocks out for his walk.  It was supposed to start raining today and I wanted to make sure he got a decent walk in before that happened.

More laundry and more work!  I am working on two hour tape and it’s going well!  Just the interviewer likes to interject “Uh-huh” and “Yes” a lot while the other person is speaking.  My advice is just let the person talk.  Nodding your head will give them the encouragement they need.  This is if you plan on having the recording transcribed, if not, “Uh-huh” your little heart out!  Actually, most clients don’t want interjections like that transcribed, but this particular client does.  Good times.  But I’m almost done with it!  I should *fingerscrossed* wrap up a good bit of work tomorrow.  Wheee!

Double berry salad:

  • Mixed greens
  • Frozen blueberries
  • Cranberries
  • Granola
  • Pecans
  • Cranberry goat cheese (awesome! Sweet and tart, perfect)

Drizzled with balsamic/mustard/olive oil combo.

Smoothie

Smoothtastic!

  • 2C US cranberry juice
  • 1C water
  • Spinach
  • Frozen pineapple
  • Frozen peaches

Tart and delish.

Also a wee bit of leftover soup as well.

This lunch filled me up big time!  I added a bit too much stuff to the salad though and didn’t realize how much liquid the blueberries would add once they started thawing.  I know now! :p

Worky, worky, worky.

Then it was off to MT.  I was so close } { to canceling.  I was in a groove with work and just wanted to push through but we have been missing so much training lately I couldn’t do it.  Plus with heading into the holidays and a big trip starting next week, I don’t want to slack on workouts!

Off to class we went where Scott and I punched the snot out of each other.  Who needs marriage counseling when you get to do that?! ;)

Fish Tuesday!  Woot!

Salmon and rice

Teriyaki Chipotle glazed salmon

  • Teriyaki sauce
  • 2 chipotles + spoon of sauce
  • Maple syrup
  • Touch of olive oil
  • Garlic powder, chili powder, and ground ginger

Toss all in a mini food processor and blend till smooth.  Pour over salmon and allow to sit for 10 minutes.  Bake at 400 for five minutes and done!

Along with the salmon was coconut brown jasmine rice.  Cook rice, add a bit of coconut oil and shredded coconut at the end.  Done!

brussel sprouts and carrots

Roasted brussel sprouts and carrots.  I used frozen, and roasting frozen carrots for the first time made me nervous.  I didn’t have high hopes for it, I thought they would turn out mushy.  Wrong!  They were fantastic!  Roasted at 400 for about 7-10 minutes, season however you like.

Ta-da!  HUGE plate of awesome good food.  I didn’t quite kick it but close!

Now I’m off to finish watching TV and then hit up the bed!  Tomorrow pretties!

  1. You bake almost everything, so what kind of pans do you use? I have started to bake just about everything too, but mannnn I hate cleaning up the pans.

  2. That dinner looks so goood :)
    Also, I agree. My body’s like that too. If I have something a bit too indulgent.. I swear it’s like he turns to me and says “Oh no you didn’t…” and the next day I wake up feeling crappy.
