October 22nd, 2009: Freedom

Hi gang!  Today has just been awesome from soup to nuts.  Mmmm nuts.  While I’m still busy and working on things, having Thursdays and Fridays all to myself are fantastic!

I tried sleeping in a bit today but instead of blissful, it was fitful.  Ah well, I wasn’t about to let that spoil my first day off. :D It’s been a while since I’ve taken a picture of the morning sky, so here it is!  Purty!  This is the view from my back deck.

I took care of Rocks, changed and proceeded to bust out five miles.  Wooo!

It was a warm one this morning too, in the 50s.  For a 7:30am October morning, that is warm for Cbus.  I was over dressed and sweating like a fool in my pullover.  Umph!  I stretched and showered and then woke up my babies.  Who then fell back to sleep.  Ahh boys.

Breakfast was a simple little plate of a sliced up honeycrisp and some 2% fage mixed with chocolate granola.  Despite having just run five miles, I wasn’t terribly hungry.  In honor of my first free day, I did make some pumpkin spice latte for the coffee!  I made sure to make a little extra this morning and I added in a touch of maple syrup and some vanilla extract along with spices, pumpkin, and soymilk.  Delicious!

While eating I read some blogs and also got some work stuff done.  Via Kath, I discovered Gcal tasks!  I have no idea why I never noticed this before but hooray!  A to-do list in my Gcal is awesome!  Getting more organized, here I come!

I took Rocky out for a walk and it was even warmer outside. :o  It did feel like rain though but I hope that’s not the case!  I don’t want rain, ew!

After the walk, I started making lunchie which was pretty quick and easy.

  • Red leaf lettuce
  • Carrot
  • Some leftover enchilada filling

Smoothie:

  • Leftover pumpkin latte mix (about 1/2 C)
  • .75C Vanilla soymilk
  • 1C US cranberry juice
  • .5C Water
  • Kale
  • Frozen peaches
  • Frozen mango

Still tasted like pumpkin spice!  It was creamy smooth and fantastic.

My salad was sort of meh though.  The mix of all the cooked stuff with the raw lettuce and carrots sort of sat funny in my tum.  The combo also left me feeling a tad bit bloated.  Thankfully the feeling didn’t last long because I had a bunch of house work to get done.

I started on laundry and then did a basic once over dusting and sweeping.  I also prepped everything for tonight’s dinner and then cleaned up the kitchen.

After a short sit-down, we headed out to MT conditioning class.  FINALLY!  Oh conditioning class how I have missed you!

toast with PBSince breakfast and lunch were both light, I was a bit hungry before class today.  I had a slice of Ezek bread with a bit of PB on top.  MMM!  Totally glad I ate this or I never would have made it through class!

For new readers (because I think I have a few! YaY!), Scott and I train in two martial arts.  We do Filipino stick and knife fighting (SF) and also Muay Thai (MT).  The conditioning class for MT is like a segment of Jillian’s 30 day shred on crack.  It’s 45 minutes long and intense.  Along with pushups, situps, jump rope, and whatever else he has us do that week (think burpees, sprints, long jumps, etc.) that’s only the first half of the class.  Then we move to the heavy bags and do drills on that for the second half of class.  Such as 30 seconds to get in as many round kicks as you can, set drills he gives us using punching and kicks, and punches then more pushups then back to punching.

Intense and I LOVE IT!  Totally my favorite thing to do period.  It’s awesome!

Then it was time to come home to Pizza Thursday!

Hers (on the right)

  • Spinach and sundried tomato pesto base
  • Shredded parm (I shred the parm myself, it’s not preshredded)
  • Red onion
  • Artichoke hearts
  • Green pepper
  • Garlic chili hot sauce

His:

  • Pizza sauce
  • Shredded moz and parm
  • Red onion
  • Green pepper
  • Chopped artichoke hearts
  • Buffalo sauce

And the newest addition for both of us, chickpeas!  Who needs meat on their pizza when you can have chickpeas instead?!  After draining and rinsing the chickpeas, I dried them off and put them in a bag.  Added a bit of olive oil, chili powder, garlic powder, and red pepper flakes.

It sounds weird but they ended up being just like roasted chickpeas, on top of the pizza.

Fabulous!  I also did the crust using spelt and AP flour.

Spelt is the way to go!  WW flour might get kicked to the curb soon.  I stuffed my face with 2.5 slices.  I realize there are three slices there but I honestly had 2.5. :D   Those chickpeas were surprisingly filling!  Ate dinner while watching Dancing with the Stars, Monday’s epi.

Now I’m off to have some wine and possibly dessert!  Till tomorrow my pretties!

    You and I are going to put Starbucks out of business, I tell ya!

    I’m currently obsessed with chickpeas. I’ve been toasting the up in a skillet and adding them to everything but pumpkin lattes. At least they’d be vegan.

    What a nice view you have!

    The salad looked great, it’s a shame it didn’t deliver. The pizza looks even better and apparently it tasted better too. Awesome!
