September 7th, 2009: day of rest

Hi guys!  Today has just been totally awesome! I got up around 7ish to a cool and dreary morning.  I took care of Rocks and then got busy working on yesterday’s post.  I loved that I had nothing at all to do today except whatever I wanted.  And what I wanted was to work on blog things and travel things.  Once I posted about yesterday, it was time to EAT!

And I wanted nothing more than to shovel yogurt and granola into my face. :D  I sliced up a red delicious, added in some 2% fage, homemade granola, and a little bit of jam for extra sweetness.  Along with coffee this breakfast was amazing and exactly what I wanted.  I missed you yogurt!

I did more blog things and just sat with my butt on the couch hanging with my laptop.  I had the sliding glass door open, the air was cool, and then it started to rain.  A lovely soft and soothing rain.  This was the best morning!

Scott eventually got up and I headed into the kitchen to make some lunch.

heirloom tomatoes

I bought some fabbo heirloom tomatoes at WF on Saturday and knew immediately that they were going in a salad.  I chopped them up, added some salt, ground pepper, and Ms. Dash Italian blend and just them they hang out and get delicious for a bit.

Also at WF, I spotted some very nice organic red leaf lettuce.  Perfect for the tomatoes!

Salad

I made a quick simple salad with the lettuce, shredded carrot and parsnip, sliced almonds, leftover salmon from Saturday, and the tomatoes!

The seasonings helped pull all the juice out from the tomatoes, which I used as a dressing for the salad.  I added in just a splash of white wine vinegar and olive oil.  Instant vinaigrette!

Smoothie on the side:

  • 1C SO Delicious coconut milk
  • 1.5C US cranberry juice
  • 1.5C water
  • Kale
  • 1 frozen banana
  • Carrot and parsnip nubs
  • Frozen peaches
  • Frozen blueberries

Delish!  And frozen bananas work so much better in smoothies than fresh ones!

Smoothie, salad, crackers, hummus, and cheese

On the side was a bit of crackers & hummus, leftover sushi, and some new local swiss cheese.  I had one sushi and realized I didn’t want it at all.  A few crackers and only a bite of the cheese.  It wasn’t all that great despite being labeled as the “most popular in Ohio”.  It was creamy but didn’t really have any flavor.  If I’m eating cheese, then gimme flav!

After lunch and kitchen clean up, Scott and I took Rocky out for a quick walk around the ‘hood.  Then it was back to the couch for me!  I did loads more blog work and also loads of laundry.

Then I got the bright idea that chocolate zucchini bread sounded like a good idea.  I quick googled some recipes and then branched off and made my own.  40 minutes later I had this beauty.

Oh yeah you know what’s for dessert later with some winey goodness.  MMMM!

The best part about today is how I was able to stay lazy! :lol:  Leftover city, baby!

OHC-09-07-09_dinnerThat is one huge honkin’ bowl of soup!  I just heated up all the leftovers and dumped it in a bowl. :D  I did not eat that entire bowl of soup, that would have been a little much for me. :p

Now I’m going to go chill for the remainder of the weekend with my two boys!  Catch you tomorrow guys!

  1. Ha, your day sounds veeeery similar to mine. Wasn’t it nice?? : )

    One thing, however, I should have included in my day was chocolate zucchini bread … looks SO good!!
