August 4th, 2009: My version

Hi gang! Remember that meal I had at J. Liu’s on Sunday evening?  Well I’ve been thinking about it ever since and decided to create my own version of it at home!  That’s what we had for dinner this evening and I have to say, I was looking forward to it all day long. :D  When we were done with MT class, I kept yelling at Scott, “It’s almost dinner time!!”  and dancing around like a goof. :D

Salmon

Salmon! I don’t have hoisin sauce so I used teriyaki instead.  With a bit of honey and other various seasonings, plus some chopped green onion.  I let it marinade in that for most of the day.  Then baked at 400 for about five minutes.

Carrots and snow peas

Ginger glazed carrots and snow peas!  They were chilling in some

  • Olive oil
  • Soy sauce
  • Honey
  • Pinch of salt
  • Ground ginger
  • Sprinkle of curry powder
  • Garlic powder
  • Sprinkle of chili powder

And roasted at 400 for about 10 minutes or so.

Coconut jasmine rice

Coconut rice!  I sauteed a little bit of red onion in a bit of butter with red chili flakes and garlic powder.  I added in brown jasmine rice and a bit of soy sauce.  Cooked it in chicken broth.  At the end I added in a little bit of sweetened coconut.

For me, this is the ideal version of that meal.  Plenty of veggies, a bit of rice, and a nice piece of fish.  YUM!!  I did not clean my plate but saved some leftovers.

Off to bed kids!  Or at least get ready for bed.  I’ve got a big day tomorrow and I have to plan.  Wheee!!

  1. Ooh that dinner looks fabulous! I love salmon, and that marinade sounds fantastic. Love the idea of coconut rice, too. I’ve definitely gotta try out that rice (and fish!) sometime soon :)

  2. This is one of my favorite meals. I have a go-to secret salmon recipe that is very similar. It’s truly amazing and I love to grill the salmon this time of year.

    The coconut rice sounds so amazing. I’m not a big fan of rice, but your method is something I could totally get into!
