July 20th, 2009: Leftover mashup

Hi guys! Last night’s sleep was less than perfect because both of my boys decided they need to party! And by party I mean Scott night-dancing in his sleep and Rocky making noises like it was New Year’s Eve.  Lordy!  I like quiet quiet when I’m sleeping.  I could care less if it’s noon and sunshine is beaming right onto my bed as long as nothing is making any noise. I grumpily got up and started breakfast.

Coffee and oatmeal

I was very hungry this morning so there was no waiting for Scott to get up before inhaling breakfast.  Blueberry oats!  Standard mix:

  • 3/4C vanilla soymilk
  • 1/2C oats
  • 1 mashed banana
  • 1 scoop vanilla whey powder
  • 1TBSP ground flax
  • Blueberries

Shredded coconut for mix-ins and some coffee for brain fuel.  I also started a load of laundry before sitting down to see what the world has been up to.  Then I showered and took Rocky out for a walk.  We have been having the craziest cool weather lately and it’s been awesome! I don’t even need to have the AC on in the house.

After Rocky’s walk I tried to get some bloggy stuff done but I’ve got 0 motivation today.  Bah!  I hate that!  Eventually it was time for some lunchie.

  • Mixed greens
  • Shredded zucchini, carrot, and parsnip
  • Cucumber
  • Sunflower seeds
  • Leftover salmon
  • Homemade croutons

No smoothie because my kitchen was a disaster and my head was two seconds from exploding because of the chaos.  The last thing I wanted to do was pull out the blender and dirty something else!  I didn’t realize I was doing it till I was done with my salad but I ate around all the salmon. :p  I guess it wasn’t good and all I wanted was the veg.

More laundry and blah blah blah stuff.  Are you bored with my day yet? I’m bored just typing about it! :lol: Due to no smoothie, you can understand that lunch didn’t hold me over too well.  I started getting hungry at 4pm which is normal but this was a I-will-eat-my-hand kind of hunger and not just a typical, hey-I-could-eat type of hunger.  I was totally ready for dinner today.  Hooray for leftovers!

Roasted squash and brussel sprouts

And some roasted brussel sprouts and some yellow squash that didn’t make it into the risotto last night.  Drizzled with buffalo sauce, a little olive oil, S&P, and garlic powder.  Roasted at 400 for about 10 minutes or so.

Awesome dinner and I loved every minute of it!  I don’t eat pasta/rice carbs all that much just because I don’t particularly care for it.  But when I do have it, I try to make sure it’s the best it can be so that I will love every minute of eating it. I succeeded at that with the risotto!

I don’t know when I’ll get to post tomorrow as I have to be up and out the door early! My SF instructor works for the Columbus fire department and he is also part of the city tactical unit.  Tomorrow the Tac Team is running through drills and what not and they needed volunteers to play victims and hostages. I am all over that, so I volunteered! If I’m lucky I’ll get to have a “wound” and have lots of fake blood and gore on me. :D We can’t take pictures though, boo! I have to be at the location by 8:45am and it’s estimated to run until the afternoon.  I’m going to try and smuggle in some lunch. :shhh: I’ll post as soon as I get the chance!

  1. Your oats look great, and I love salmon in salads! What a fantastic dinner, too. Wow that sounds like an interesting volunteer opportunity! Have fun :D
