July 14th, 2009: Recreation

You know that I was truly blown away by a meal when I start to think about how I could make that at home.  This is exactly the case with dinner tonight.

First though, there was this.

Berry Odwalla bar

About 1/3 of a berry Odwalla bar before MT today as a preworkout snack.  I love Odwalla bars even more than I love Clif bars but this berry flavor was a bit too sweet for me. I probably wouldn’t get it again but would take it if offered.

Now dinner! Seriously once I decided that I was going to do this, I could only focus on dinner for the rest of the day! :p I loved our dinners last Friday so much that I did a little creative thinking to make something similar here at home.

Shrimp and scallop tortilla

Tuesday Night seafood with a twist! I made a very basic guacamole:

  • 1 avocado
  • The juice of 1/2 a lime
  • Salt, pepper, and garlic powder
  • Salsa for added flavor

I spread the guac on red chili flour tortillas from Whole Foods.  Sprinkled on some shredded cheddar and pepper jack cheese and then topped that with shrimp and bay scallops (small scallops).  Baked at 400 till the cheese was melty and the tortilla a little crisp.  I was going to sprinkle with some cilantro but was too hungry and wanted to stuff my face with this goodness.  I topped mine with chili garlic hot sauce and Scott had regular Cholula on his.

Side dish was green bean and potato salad from Sunday.

Fabbo! And I scarfed down that whole plate, yum! I love dinners like this, where you just think the meal is awesome and you can’t get enough. :D
