July 13th, 2009: Back to the grind

Whoa! Nothing brings vacation to a screaming halt like Monday morning, eh? Woke up this morning and got started on the day.  I decided that today is going to be productive no matter what!  Mondays are meant to be days I spend doing blog stuff but lately that hasn’t been happening and it’s time to get back into the swing of things.

I got Rocks taken care of, worked on blog stuff and then finally had some coffee.

Coffee

Mmmmm it was so yummers! Bonus is that I have replenished my supply of the good creamer so that made it even more special.  I read a few blogs and got my computer back to the way it was, then I made some breakfast for Scotts and I.

The last trip we made to Sam’s I forgot to pick up a bag of frozen blueberries.  I can buy a huge 3lb bag for a decent price and with my new found love of blueberry oats, I’m going through that bag pretty quickly.  When we were at Meijer yesterday, Scott asked me if I wanted a bag of frozen blueberries and I declined.  They were expensive and I was just going to wait until we hit Sam’s again.

My husband bought them anyway and thank goodness he did! Because I was a little sad at the prospect of blueberryless oats this morning but he saved the day!

Oats with coconut and almond butter

Blueberry oats! With coconut and a little vanilla almond butter for mix-ins.  YaY!

After breakfast, Rocks and I suited up for our morning walk.  Today is actually a very nice day in C-bus!  The sun is shining and the weather is cool, cool! I’ve got the AC turned off and windows open!  While it is strange weather for July, I am not complaining! I love it!

When I got back home, I cranked out some productivity! I did laundry and worked on posts for this week along with other posts for future articles.  Oooo la la!  Then it was time for lunch.

The HQ is loaded up on fruits and veggies thanks to our recent shopping trip and I wanted to eat everything in site.

Salad

I tried my hardest to achieve that.  Salad!

  • Mixed greens
  • Chopped beet
  • Chopped cucumber
  • Shredded parsnip
  • Shredded carrot
  • Shredded zucchini
  • Chopped broccoli
  • Sunflower and pumpkin seeds
  • Pieces of leftover salmon

Drizzled with a honey mustard dressing (homemade).

Crap blender

Smoothie! I got a new blender yesterday to try out hoping it would be better than my current blender.  Not even close. My old blender is better! Pfftttt can you believe that? I blended the heck outta this smoothie and it was still gritty and a bit too chunky. Meh.

Smoothie

  • 1.5C unsweetened cranberry juice
  • .5C POM
  • 1C water
  • Kale
  • Carrot
  • Frozen pineapple
  • Frozen mango
  • Frozen blueberries

The upside is that it is wider and bigger so it handles the smoothie amount a lot easier but I was really annoyed that it didn’t do a better job of blending especially since it has a “smoothie” setting.  Whatevs.

Watermelon and cherries

More fruit! Watermelon and Bing cherries I got on sale for 97cents a pound.

Smoothie, salad, and fruit

Fantastic lunch! I blew through that salad right away, the salmon totally made the salad. I drank my gritty smoothie like a good girl and then I chowed down on some watermelon and fruit.

Now I’ve got to bust out some more articles and write a letter.  Go Monday!

  1. Funnily enough, the blender I just bought at Big Lots, which is the same brand but a lesser-style of my current blender, works better than the other one. So the one I paid $20 for works better than the one The Vet paid $40 for. Crazy!!

oooh can you post the salad dressing recipe? That sounds good. I want to try to eat more salads…errmmm….at some point. LOL (do you cook the beets first?)

I had a blueberry smoothie today and it was soooo yummy.
