Hi guys! I did indeed have another small snack last night, a fruit and cheese plate!
- Frozen grapes
- Two prunes
- Dried apricots
- Raw goat’s milk manchego
- Sheep’s milk manchego
- 2 slices of another sheep’s milk cheese
Scott and I split this but I had all the grapes and the prunes. A few apricots and a couple bites of each cheese. Oh and a glass of wine! We watched Chris Rock’s latest standup (from before the election) and admittedly it wasn’t that great. Normally we love Chris Rock but this one was sort of crappy.
Then I hit the sack for some much needed rest. I was up and ready for my run this morning. Since I haven’t run since Tuesday (Yikes!) I was itching to get out there and stretch my legs. I wore a running skirt and remembered my WonderWoman wrist band. I did 3.5 with no issues.
I slammed two glasses of CS and was back out the door for Rocky’s run. I knew it was going to turn hot today so I needed to get him walked while it was still cool out.
After that, I came home and changed into comfy clothes and hit the couch with some coffee.
And my book. I was close to finishing it and wanted to see if I could knock that out this morning. Reading and a steamy mug of coffee were perfect Sunday morning activities.
Once I finished my book, I bustled around the kitchen doing dinner prep. I got some chicken legs in a brine, made a bean salad, and made a BBQ sauce.
Scott was up by this point so it was time for Sunday breakfast! I bought my first batch of local organic free-range eggs the other day at WF.
When the egg looks like this, I think that’s a pretty good indicator of its freshness and its environment.
I made a veggie fritatta.
- Red onion
- Green pepper
- Carrot
- 4 eggs
- Sliced tomatoes on top
- Shredded cheddar
We also had toast! I’m not sure what it is but toast is the one thing that just screams breakfast to me. Whenever I smell it, I think of a big huge breakfast with eggs and sausage, and hashbrowns. Love it!
And there was some chicken sausage on the side. I had a three halves of toast, coming to a total of a slice and a half, which was an oatnut bread. Smidge of butter on the slices. So very yummy! Normally I don’t eat that much bread but I was loading up for my next chore.
Once the kitchen was cleaned up, I changed and headed outside for some yard work. Meh, I hate yard work. I pulled weeds, trimmed my peony bushes, and dug up three shrubs that were dead and needed removed. UMPH! I was a hot mess after that. I was outside for a while too, probably over two hours. I didn’t have my HRM on so I’m not sure on the exact time.
I came in and tried a new recovery drink.
Mango coconut water. I had two sips and that was enough for me. It’s too sweet and syrupy for my tastebuds. I’m 0-2 on the food blog foods! :p I switched to water and then headed upstairs for a much needed shower.
Once I was squeaky clean I called my mom, (Hi, Mom) and munched on some raisins. No pic because I was chatting and eating. Then I started getting stuff ready for dinner. Pulling the chicken out of the brine, prepping some green beans and so on. I also got some ice tea started for Scott. Since he’s looking for something to drink in the evenings, I thought he might like some tea.
Raisins weren’t enough of a snack and I needed something with some umph.
Pinenut hummus and some wheat crackers. I love these knockoff Triscuits from WF. They have two ingredients, wheat and salt. Awesome!
After Scott was done outside and showered, it was time to get started with grilling dinner!
There were grilled bbq chicken legs.
Roasted green beans with almonds.
Chickpea salad. I promise there’s other veggies in there! Shredded carrot, zucchini, and beet. The beet was so juicy and vibrant it took over the dish.
Also some roasted potatoes that I forgot to get a closeup of. That’s a lot of food and I totally kicked that plate! Not only did I kick it but I started reaching over to Scott’s plate for more green beans. :p He was too busy eating chicken to notice. I only had a few bites of his green beans and then I was happy and content.
Finally time to relax so I’m off to hit the couch before heading up to bed. Hope you all had a fabbo weekend!
Even though I may have been a little freaked out by the feather I still think it’s kind of awesome! Soooo fresh!
Woahhh, that’s crazy that there was still a feather on that egg! Wow. You can’t beat that kind of freshness, I guess! Oh, and the chickpea salad is so pretty and colorful
Ok, now I’m hungry dang it!
Is that pine nut hummus just regular garbonzo hummus with pine nuts mixed in?
