Well since neither of us finished our smoothies at lunch, we got hungry much earlier today! Unless it’s a Tuesday or Thursday, when I have MT, I don’t like having an afternoon snack. We don’t eat dinner before MT so I need a little something to get me through class. Other days, snacks aren’t my thing. It’s not that I don’t ever have them, it’s just that I don’t prefer it. I’m already home, since we both work from home, so if I’m hungry I might as well just eat dinner.
Today was some leftovers and some quick and easy stuff.
I took some leftover slaw and combined that with mixed greens. No dressing needed since the slaw is already dressed. Bonus!
Side plate of baked beans with some extra black beans added, leftover asparagus from Saturday, and some b-nut frries coated in buffalo sauce and baked.
I killed the salad and had another small spoonful of slaw. I love coleslaw! Especially when it is not dripping in mayo, ew. It’s such a great light summer dish to have. I ate the beans and most of the fries. The b-nut wasn’t thrilling me today and the asparagus was past its prime, so I just had a bite of that.
And that’s dinner!
I need to work on some articles but what I want to do is read a bit before SF class. It’s probably better that I do some work! :p
