Hi guys! It shouldn’t surprise you that lunch didn’t hold me over very well. So I munched on some raisins…
…while getting some stuff around the house done. Finally I could make dinner which was good because I was about to gnaw my arm off. Whew!
I decided on apple cheddar quesadillas (I use way less cheese now). And actually Scott decided, he had a choice for dinner and picked these.
With sweet potato fries that had some seasonings, buffalo sauce, and olive oil.
And a small side salad with:
- Mixed greens
- Crushed pecans
- Shredded beet, golden beet, and parsnip
Topped with a bit of balsamic and olive oil.
I ate all of my salad, two sections of the quesadilla, and a few fries. Now I’m stuffed! Unfortunately I have to bust on out of here because there’s some things I need to get done before SF class this evening. I will say that I will be happy when next Friday rolls around because right now Scott and I have a loaded weekend and loaded next week. By next Friday things should be a lot slower and we can breathe a little easier.

Yum! I need to pick up some red onions and cheddar to make this because I already have some yummy apples & tortillas at home.
