Hi guys! Listen my day has been so boring you don’t even want to know about it. I swear! Let’s just move to eats! Around 3pm my body decided it was starving. This was not an “tank is empty” kind of feeling but a total, “Feed me now or you’ll be sorry!” kind of feeling. Apparently my fabbo lunch wasn’t so fabbo after all. We are out of fruit and I already had yogurt for breakfast. What to do? I didn’t want a bar so I moved to an emergency plan.
A slice of oatnut bread toasted and topped with vanilla almond butter with a side of CS to wash it down. It was tasty but quite frankly I would have prefered fruit or yogurt. This just felt like empty food.
And it didn’t work! I gave myself a good long time for my brain and stomach to get back in the groove, didn’t happen. I stayed starving. I guess it really was empty food. This meant I had to move on to making dinner.
This made me so cranky! It’s an aspect of my personality that drives me bonkers. Yes I can drive my own self nutty. Basically I set up a plan for how each day is going to roll and when the day doesn’t roll how I envisioned, it throws me off balance and makes me cranky. I am working on not being cranky about things like this but it is a slow going process. Anyway, my plan for today was to hit the grocery store before dinner. This way I would be stocked back up on veggies and possibly get inspired by something I bought to center dinner around. I was too hungry to wait until after grocery shopping and Scott was hungry as well. That meant I had to come up with dinner using what I had on hand which is not much!
I think I did a good job though.
- Main dish was WW pasta (I wasn’t looking forward to more carbs but I rolled with it) and I tossed in some:
- Chopped carrot
- Red onion
- Sundried tomato
- Some leftover spicy sausage
Everything got sauteed up in a bit of olive oil and once the pasta was cooked and added in, I mixed in the leftover pizza sauce to provide some extra flavor. It’s sort of like a healthier twisted version of goulash.
Side was frozen brussel sprouts I tossed in some buffalo sauce and roasted at 400 for a few minutes.
Not too shabby of a dinner for cranky on the fly cooking! Or as Scott says, “You know how to bring it.” :p Now I need to figure out the rest of my evening. I need to go to the grocery store but I totally do not want to. Especially now that it’s almost 7pm. Eeep! But shopping during the weekend is out because the grocery stores are Le Crazah then. At this point I’d rather stay home or just hit up Sam’s quick (No Costco here, the closest one is 40 minutes away, too far!). Decisions decisions!
