April 27th, 2009: Dinner

Hi guys!  Before seeing the doc, I had a small bowl of blueberry mini wheats that I found in my pantry.  I love this cereal but probably won’t get it again as it has corn syrup in it.  YUCK!  Granted it’s not HFCS but still why can’t we just have some sugar or cane sugar?

I have gotten the all-clear from the doc!  :woohoo:  So now it’s time to prep and get ready to kick this 1/2’s butt on Saturday!  It’s going to be long and it’s going to be rough but I can do it.  And then I think I might have Scott whisk me off to breakfast afterwards so I can stuff my race face. :D

Okay so dinner tonight was veggie loaded and something I’ve been dreaming about for a while.

Veggie udon noodles!  Heaven. Mmmmm  I loaded this baby up too!

  • Onion
  • Green pepper
  • Green onion
  • Broccoli
  • Sugar peas
  • Carrots
  • Zucchini
  • Mushrooms (for Scott)
  • Vegan nuggets from WF

Delish!  Sauteed up with some spices, teriyaki sauce, and some chicken broth.  Mmm mmm.

I have such a busy week this week!!

  • Race prep
  • I need to go to WF and get some things
  • Have to go to the post office to mail things
  • Find a flipping foam roller already

Plus a million other things but one of the things I’m looking forward to besides the race is our date night this week.  Scott and I are headed to the ballet where they are putting on a performance of The Great Gatsby.  So awesome!  Not only that but we get a backstage tour as well!  An email was sent out and the first several replies would get a backstage tour of the production after the show and it’s for the night we are going.  Hooray!  So I responded quick like lightening and we got a spot.  So fun!  Can’t wait for our date night now. :D

Off to class guys, catch you tomorrow as I start my taper runs.
