I don’t even really understand how it’s going on 9pm. This day has flipping flown by! Crazy! The rain stopped long enough for Rocky to at least get in one walk today. Thank goodness, he was going a bit stir crazy. When we got back, I changed into jammies (no lie) and called one of my bestest buds (Hi Bevvie!). We chatted for a bit and then I got dinner going in the oven. I had an experiment brewing up in my wee head that involved blue cheese. However I tasted the blue cheese that I bought from Meijer and it was so gross. Ew. I had Scott taste it and he agreed that it was not good. Bah! At least it wasn’t expensive.
Perhaps this was the problem? Maybe I need to buy pricier blue cheese? So my sidedish idea was a bust but that’s okay! We still had a very nice supper. While I was prepping and whirring around the kitchen there were snacks.
I only had a few raisins and a small amount of pistachio chips. Only a few rice crackers. I really didn’t want to mindlessly munch so I pushed them off to the side and forgot about them. I had a cranberry fizzie to sip on. Scott and I have a SF seminar that we are attending tomorrow so posting might be at the end of the day. Because of that, I decided to plop a roast in the oven so that tomorrow we could come home and easily reheat leftovers.
It was a rump roast and I tossed some carrots, onions, and green peppers in with it. On the side was a baked potato. Lord I love baked potatoes. This only had a wee smidge of butter on it, the smallest amount I could manage. It was also 1/2 a baked potato, a whole one would be too much for me. There is, of course, horseradish cream sauce to go with the beef. Made out of yogurt so it’s healthy. Score! I cleaned my plate save for a few bites of veggies. My slice of roast was small.
Now it’s off to hang out with my boys and hit the hay early for tomorrow’s seminar. Hope you guys are having a great start to the weekend!
