March 16th, 2009: Dinner

Hi guys!  I got some things done today but not nearly as much as I would have liked!  Mid-afternoon, Scott convinced me to have some coffee.  It didn’t take much to persuade me. ;)  I had been thinking about coffee for some time and I was a bit munchy.

A cup of decaf otherwise my stomach would have been all kinds of upset with me for the extra caffeine.

My snack was some bear naked trail mix that had raisins, cashews, and mango.  I added some extra raisins. :D

Dinner tonight was vegtastic!  I am totally predictable when it comes to veggie dishes.  When I’m really craving a good bit of vegetables I’ll either make soup, chili, tacos, or something along those lines.  Something that allows me to jam pack the veggies and get the most per bite.  Today was a stew loaded down with veggies.

And on the side some quick and dirty garlic bread made with whole grain bread. By quick and dirty, I mean I top the bread with some butter, sprinkle of garlic powder and Italian seasoning and toast.  Very tasty!

Scott’s quick and dirty garlic bread involved ciabatta which I had two bites of, you should be able to see evidence of that.  It was so much tastier!  I totally think a white bread makes a better garlic bread.  Maybe I just haven’t found the perfect whole grain bread yet?

The veggie stew was topped with a bit of grated parm.  The veggies were as follows:

  • Onion
  • Carrot
  • Green pepper
  • Celery
  • Zucchini
  • Jalapeno
  • Corn
  • Peas
  • Green beans
  • Broccoli
  • Kidney beans (for protein and texture)

In a tomato based sauce.  Very hardy and yummy!

Looking for veggie inspiration

As I mentioned, this is usually my go-to tactic to get some decent veg.  But I would like to expand a little bit.  That’s part of the reason I bought the two new vegan cookbooks, to help me find different ways to prepare and consume veggies.  Stews and such are great but clearly there is more to life!  Any veggie sites or books you would recommend?
