February 26th, 2009: Breakfast and lunch

Hi guys!  So far I’m having a great day despite getting to bed too late and not sleeping all that great.  When we got back from class all I wanted was a glass of seltzer and you know we’re out.  Booo.  I had water and a snack.

love this snack!

Some kashi honey sesame crackers, a huge red delicious, and some PB.  I split this snack with Scott. :D  We watched a horrific Pens game and then I headed up to bed after 11pm. :tired:  My alarm went off at 6am and I shut it off and tried to go back to sleep.  I decided not to run this morning since I had a not so great sleep and instead would do some yoga later with Scott.  I laid in bed for an hour before Rocky started throwing a fit wanting to get up.  His “fits” consist of him laying in bed doing huge boxer sighs (a boxer will actually sigh and make “HMPH!” noises at you :p ) and I can only take so long of that when I’m trying to sleep.  All other times I find it adorable.

I got up and got him taken care of and was so impressed with the weather outside.  It was an amazing spring morning.  Granted it was gloomy and cloudy and felt like rain, but it was still warm.  I made some breakfast of another yogurt mess.

Same dealie as yesterday along with coffee.  I did some bloggy stuff while eating breakfast and checked in on all of you!  Sometimes I get in a commenting rut or just don’t have much to add to the conversation, so if I don’t comment just know I’m still reading!

And then I realized I needed to get out and run!  I wanted to be out in that nice weather doing my thing.  Plus the forecast says rain for today and tomorrow.  It currently wasn’t raining and I decided to take advantage of the situation (and it’s possible I might not be able to run tomorrow).  At 45F, I was able to pull out a new pair of crop running pants, a new shirt, and wear my hoodie.  It was that warm.  Hooray!  And needing to shave be damned, I was wearing those pants.  If someone noticed then obviously they were looking too closely at my leggies.

Running was awesome!  I just did a nice pace run for 3.5 miles.  My ears started stinging just a bit from the weather.  I put my hood up and it helped a little bit.  I would have done more milage but my ears couldn’t take it.  When I came home I drank my CS and then was back out the door with Rocks.  I decided since it still wasn’t raining, I better take him while the getting was good.  We did about 30 minutes and I came home and did some stretches.

After my shower I had a mid-morning snacky.

Some raisins and some kashi honey sesame crackers.

I had originally suggested that maybe Scott and I could go to breakfast this afternoon for lunch.  And the more I started thinking about it, the more I realized that what I wanted I would not be satisfied with getting out somewhere.  Our favorite place to go is First Watch and while I love it, I don’t think they make very good omelets.  And I wanted an omelet with lots of cheesy goodness.  I also wanted homefries but didn’t want to have to resort to HFCS ketchup.  I could bring my own I suppose but I haven’t really crossed that line yet of bringing my own food/condiments to restaurants.  So we stayed home and I made breakfast for lunch!

wow!

wow!

Check out the monster omelet I made!  It was huge and looked awesome so I had to take a picture of it.  Making omelets for me can be a crap shoot.  Either they look awesome, like today.  Or they’ll turn out looking like something your drunk Uncle Larry made at 3am.  Glad today was a good day!

Here’s how it looks after I’ve removed my portion. :D  This omelet was made with 2 eggs and a bunch of egg whites (not sure how much because I was using egg beaters and just poured some out).  Some mustard and horseradish into the scrambled egg mixture.  The inside had pepperjack, spinach, two slices of ham, and colby jack.  YUM!

On the side was 1/2 an asiago bagel straight up and some homefries.  I cubed the potatoes and seasoned them with a bunch of stuff and coated them with some olive oil.  Roasted at 425 for about 10 minutes, then I added in some chopped green pepper and chopped onion (also with a bit of oil), tossed everything together and let it finish roasting.  Roasted homefries are a lot easier and quicker to make and they are healthier!  With some OJ to wash everything down.

Then I went in for some more potatoes!  I didn’t eat this whole second portion, just a few bites.  Breakfast lunch was a success!

Pampering Day

I’m having a very indulgent type of day and I’m looking forward to it!  However I’m not going to call it indulgent day just because I don’t really care for that word too much.  Indulgent, to me, sort of implies something bad and something that might cause you to feel guilty.  I don’t feel guilty at all for my day I plan on having today nor do I think it’s bad for me.  We all need to just live life a little, right?  So today is what I’m calling a Pampering Day!  My lunch was an example of how I’m pampering myself today.  Carbolicious and cheesy goodness.  There’s going to be wine in my future and maybe some chocolate as well.

I believe that we all just need a day (or weekend, or vacation) to do whatever, eat whatever, and live however.  It’s good for our soul, recharges our minds, and is good for relaxing and destressing.  Do you want to have a Pampering Day with me? :D

  1. Oh my goodness!!! That is so funny about Rocky! Ginger does the same thing, but its a little more whiney and the noise goes down and then up. It is so pitiful. She also “sighs” really loudly when she’s trying to sleep and we’re talking too load or waking her up. Haha!
