February 10th, 2009: Dinner

Before MT, me and Rachael snacked on some yogurt.

2% fage with some bear naked banana nut. :D   Then it was off to MT where we worked on clenching and my neck got all kinds of scratched up.  You know it’s a good class when you come home with some bumps and bruises!  Once home, Rocky stayed all snug in bed so I got started on dinner.  Part of it I made earlier today using these ingredients:

Scott had a choice between sweet potato fries or regular oven fries.  He picked regular oven fries, so I got those together and in the oven.  Then I worked on my dinner since I don’t really care for birthday dinner #2, but it’s Scott’s favorite.

What did I end up making?  Pimento cheese!  Lord he loves that stuff and since it’s not the healthiest thing in the world (by any means) he doesn’t get it often.  But a birthday is special!  He actually prefers his pimento cheese sandwiches slightly “grilled” like a grilled cheese.  So that’s what he got!  I had a small dollop on my plate that I ate with 3 kashi veggie crackers and some oven fries!  My salad had:

  • Romaine
  • Spinach
  • Cranberries
  • 3 crack squares smashed (and 1 that I just striaght up ate)
  • Grape tomatoes
  • Sunflower and pumpkin seeds
  • Chocolate granola (I know! Living on the edge!)

Dressed with a little balsamic dressing.  I ate everything and those fries were damn good.  Mmmm!  Now it’s time for some hockey with the hunnies.  Catch ya tomorrow!

    • Heather, I like that magazine a lot and it’s one of the few that I actually subscribe too. There are always a ton of recipes in each issue. And even if I don’t particularly care for an ingredient, I’ll get an idea for something else. :) Another one I’m about to order is Real Simple. They have loads of neat ideas for cooking and around the house.
