Dinner tonight was leftovers and something new for me. This:
Tofu. I am determined to try and see if I can like it. Especially since I’m sort of leaning more away from meat in general. As of right now it just doesn’t hold an appeal to me. I had a small bite of leftover chicken and I was just, “meh” about it. I in no way shape or form think I’ll give it up entirely because I do like it! Just now in small doses.
Anyway, I bought some extra firm tofu and pressed the hell out of it for an hour. Then I made a marinade out of:
- Teriyaki sauce
- Olive oil
- Mustard
- S&P
- Garlic Powder
- Chili Powder
- Red pepper flakes
I sliced the tofu thin and it sat in the marinade for about 1/2 an hour. Then I baked it at 400 for about 1/2 an hour, flipping once. It resulted in this:
Nicely browned, firm to the touch, and crispy tofu.
The rest of my dinner was a baked sweet potato that I put a bit of butter on and cinnamon sugar. Roasted asparagus, and leftover veggies from yesterday. I took my first bite of the tofu ready for chewy goodness and it tasted like nothing. Not a thing. A sponge, like I was eating a sponge. Ew. I pulled out some BBQ sauce for dipping and that helped me choke some down but then I stopped. I don’t want to choke down my dinner, I want to love it. I was not feeling this tofu. I still have a bit left that I was going to try and make a BBQ sammie with tomorrow but now I’m not so sure. Perhaps tofu just isn’t my deal?
But at this point I’m not focusing on that! One day down and only four more days to get through till MY FIRST RACE! We are currently supposed to be getting winter weather (more!) this week so I’ll have to see how that affects the race trail.

I’ve never been able to get on the tofu wagon either. Even tho I’m not that crazy about meat either but tofu texture is just yuck.
I love chicken, seafood, and a little bit of pork, but I’m not crazy about beef or anything resembling beef. The asparagus looks yummy, I love that!
