January 11th, 2009: Dinner

Hi guys!  I’m about to tell you how non-productive my day has been.  I did not do laundry and I did not get out with Rocky yet. :p  My day has been spent in bed!  I headed upstairs and crawled in bed to read while Scott got dressed and ready for the day.  I had the heating blanket on and everything.  However, Scott stopped short of getting dressed and just crawled in bed with me.  He took a nap and while he and Rocky were napping the day away I read my book.  Warm hubby and warm bedtime was a fantastic way to spend my day and I feel very recharged and ready to deal with the upcoming week ahead. :D

Eventually we got out of bed and headed downstairs.  Mostly because Rocky was fidgeting as it was his dinner time.  I fed him and got our dinner in the oven to heat up.  We were having ham!  I had a wee ham that I got from WF and heated that up.  I tossed some carrots in the roasting pan as well.

Dinner was fantastic!  I tried a new idea out on the ham and it worked really well.  Now I’ll do that again when I make a ham for Scott’s birthday next month and will be posting the recipe soon.  Probably the best hammie I have made yet.  So good!

On my plate is a ham slice with some of the carrots and pineapple that roasted with it.  Also a twice baked potato.  I made extra when I made them back for Christmas day dinner, so the extra got frozen.  And on the side is a small salad with:

  • Romaine
  • Sunflower and pumpkin seeds
  • Cranberries
  • Sliced almonds
  • Goat cheese crumbles

All dressed with some maple balsamic dressing.  I’m calling this my half dinner because I had only half of everything. :p  The salad was so good I was wishing I had room for more but I was full.

I did try to watch the Superstars of Dance episode but deleted it when I realized it wasn’t the first episode!  Doh!  All the commercials I saw for it made it seem like it was just starting and that was the premiere.  Wrong.  So I deleted it since I don’t like starting shows in the middle. I was a little bummed but got over it quickly.

Now I do have to walk Rocky and then the evening is wide open.  I’m hoping there’s going to be more reading in bed!
