December 23rd, 2008: Breakfast and Lunch

Hi guys! We were home from SF, in our jammies and watching TV all before 10pm.  Hooray!  That almost never happens.  We busted out of there after class and since it was 11F outside, that was a wee bit too cold for an evening walk with Rocks.  So we got all snug inside instead.  I made us a small snack.  I heated up some apple cider, cranberry juice, and some spiced rum (just a wee bit) for us to drink.  I also put out a bowl of PB puffins.  Thinking Scott was going to help me eat them.  Wrong!  Guess who inhaled those Puffins?  That’d be me.  He was not snacky after his big supper and since I had a salad, I didn’t feel guilty snacking on a rather large bowl of Puffins. :D

I was so tired last night.  By 10:30, I headed up to bed to read for a bit.  I should have just went straight to sleep I think, that’s how tired I was.  I easily could have stayed sleeping this morning, but I had things I wanted to get done so I got up close to 8am.  Got Rocky taken care of and it was chilly outside.

I was starving this morning so I made some pumpkin oats!

I don’t know why they lost their orange color. :(  But they were awesome!  Standard oats:

  • 1 C of vanilla soymilk
  • 1/2 C of quick oats
  • 1 mashed banana
  • Pinch salt and cinnamon
  • 1/2 C or so of pumpkin puree

My mix-ins were cranberry, walnuts, and a big spoon of dark chocolate PB.  YUM!  Along with morning coffee and creamer.  I didn’t eat all of the oats though.  I have found that eating the oats before my run, I don’t eat nearly the same amount.  I consume considerably less.  I’m not sure if this is a good thing or a bad thing.

It wasn’t long after eating that Scott got up and I decided to take off for my run.  Weather forecast says today is supposed to be nasty with rain, freezing rain, and then more rain.  How Christmasy! /sarcasm  So I wanted to get my run and walk Rocky before anything started, if it was going to.  It is really gloomy overcast today so maybe it will do something.

I ran the usual 3.5 miles and it was glorious!  Aside from my nose wanting to constantly drip, it was perfect.  I came home and drank my CS and was back out the door with Rocks for his usual as well. By the time we got home I was perfectly frigid and wanted nothing more than a hot hot shower.

After my shower I did some work stuff and my stomach took over and it was time for some lunch.  I wanted something breakfasty, and thanks to Lindsay’s post I remembered we had English muffins!  Eggs with an english muffin it was!

But wait! Just as I was about to make lunch, Scott had a conference call.  Blast it anyway!  I settled for some fruit to tide me over.

1 clem and 1 orange.  That worked for maybe 1/2 an hour and in a huff I went and made lunch.  I was huffy because the conference call was supposed to take place this morning, not over lunch.  But no worries, I got over it quickly.

Also on the side of lunch was some chipped ham I sauteed up quick in a skillet with just some olive oil Pam.  I like when it gets nice and brown crispy.  Mmmm!

After lunch and cleanup I decided on a emergen-C to play it safe.  No pic, wasn’t sure if you all were interested in that.  Anyways, physically I’m feeling fine.  However my throat has been more dry at night and my nose seems to be at high production.  Not wanting to get sick over Christmas or the holidays period, I figured taking something will do more better than good.

Now I’m off to do a little bit around the house and read some before heading to MT tonight.  After tonight we are on full-time vacation!  Hooray!
