November 1st, 2008: Morning

Happy November guys!!! Wow this year, but most especially Fall, is just flying by. I can’t believe it’s November already! Only four weeks till T-day! Are you in the planning stages? Do you cook, do you go somewhere? Do your order Chinese food? I cook (like you thought differently ;) ) and I make us a huge spread. This year I’m kicking things up a bit and trying some new twists on favorites.

Well, I was up and at ’em early this morning thanks to Rocks who decided that we did not need to be in bed past 7am. Naturally he’s gone back to sleep on his downstairs bed and I’m up for the day. I actually was starving this morning which surprises me because I felt like I indulged a little yesterday. I didn’t think I would be so hungry that soon. So I decided to make some more pumpkin oats! Hooray!

I made a mammoth bowl of oats too!

  • 1/2 C quick oats
  • 1 C of vanilla soymilk
  • 1/2 C of pumpkin
  • Pinch salt and cinnamon
  • 1 mashed banana

My mix-ins were:

  • Cranberries
  • Crushed walnuts
  • Coconut
  • Chocolate chips (!)

Seriously, look, my bowl is filled to the top! The oat combo makes a huge batch of oats. That’s just my serving, there was still some left in the pot for Scott’s breakfast.

I also had the morning coffee with some mint truffle creamer. Ooooo! I cannot even tell you how much I love the combination of mint and chocolate. ADORE it and love the holidays when everything is filled with it. Also? Mint M&Ms make their magical appearance. There’s no way I’m going to be able to stay away from those so I might as well just start looking for them now, right?

Except for two bites, I ate my whole bowl of oats. The creamer was just okay; it was International Delight. I prefer Coffeemate’s peppermint stick flavor that comes out for xmas.

I don’t know if you can see it in the back, but that’s the wine from last night. We didn’t finish the bottle, can’t do that anymore. Back in the day we could polish off a bottle of wine, but not now.

Okay guys, I need to do some stuff around the house before heading to class! Hopefully I have enough energy to make it through.
