November 11th, 2008: Lunch and Dinner

My oats this morning held me over so well! I love pumpkin oats so much. I wasn’t hungry until well after 1pm, Go oats! Lunch was kind of a mixture of different stuff.

I topped the leftover ezek english muffins with some salsa and the remaining Morningstar sausage patties. Each piece got a 1/4 slice of colby jack and I put that in the toaster oven to get toasty and melty. I also had a carrot and apple on the side. AND I tried my hand at making Kath’s kale chips. I couldn’t find the exact recipe so I just guessed at the process. :p I laid some chopped kale on a baking sheet and drizzled it with olive oil. Then I topped it with some garlic powder and chili powder and baked it at 375 for about 5 minutes or so.

These are a brand new obsession of mine! I called them french fry puffs. Because they taste exactly like french fries (at least the way I make mine) and they just melt in your mouth and go poof. I dipped them in ketchup and it was fabbo! I ate most of that, all of the carrot and apple and left 1/2 of an ezek muffin. Scott had some kale chips too and also loved them. Hooray!

After lunch was some work and a little more organizing in my office. As much as I loved lunch today, it did not hold me over at all. I was sooo hungry not long after. I made it till 4pm when I needed to devour something.

I decided on a full size Clif bar to curb the hunger and get me through MT class. I had a blueberry crisp Clif bar. It was very good! I like the blueberry Z bars a little better but the flavor of this bar was tops. It immediately stopped my hunger and got me through my MT class, no problem. I love you Clif bar!

After class and a quick walk with Rocks, it was time to make dinner. I was hungry but not famished and only wanted something light. Since Scott was having yesterday’s leftovers, I was free to have whatever struck my fancy. Prepare for the random meal!

I toasted a pita and topped it with PB and some honey.  This was just a regular white pita because I found some in the freezer that need used up.  On the side is some spaghetti squash that I pulled from the freezer and reheated.  It reheated very well!  I just had to drain the excess water, much like you would with frozen spinach.  I drizzled that with a little maple syrup and a sprinkle of cinnamon.  I ate everything on my plate!  We started the Pens game while we ate and now I’m off to bed.  I’m freezing and want to get snuggled in my flannel sheets!  See  you tomorrow :D
