October 22nd, 2008: Lunch and dinner

Hi guys! After I posted about my breakfast, I went upstairs to wake Scott up and to change into workout clothes. I pulled out the Wii Fit and did about 42 minutes of it. I tried the boxing exercise and it isn’t bad. I busted my hiney on the hula hoop though! That’s the one that makes me sweat the most, isn’t that funny? I did a personal best (and best between Scott and I) and did 811 rotations! :woohoo: I did the plank (planks are so hard for me!) and unlocked the 60 second version. I don’t think I could hold a plank for an entire minute! :o I unlocked a bunch of other new things as well, so I’m looking forward to trying them out.

After the workout I went up and showered. Then came back down to get started on some “chores”. I got the summer comforter washed and put away until next summer. I tried saving some icky tortillas by making them into “chips” but they were still icky that way so they got tossed. Then I started getting hungry!

While I tried to figure out what I wanted for lunch, I snacked on some raisins. I really wanted a salad but the last of my lettuce wasn’t so good, so that was out. I thought about making a BBQ veggie burger, but the new BBQ sauce I bought was gross. Finally an idea struck!

Mexican pita pizza! I topped a WW pita with salsa, pinto beans, corn, and some shredded Mexican cheese (Queso something?) and some cheddar. Baked at 400 for a few minutes till the pita is crispy and the cheese melts. Yum! Totally hit the spot and the WW pitas were fantastic. Nice and crunchy but very hearty. In fact I only ate three slices because it filled me up so well.

After lunch Rocky and I took a quick walk. Then I did:

  • Roasted some spaghetti squash to get it ready for dinner later.
  • Got parts of tomorrow’s dinner prepped.
  • Washed the throw pillows on the couch.
  • Washed the blankets and couch covers.
  • Dusted and swiffered the downstairs

I had about 1/2 an hour down time before I needed to get started on dinner. I checked mail and checked as many blogs as I could. I miss you blogs! I’ll be around soon! :D

I roasted two huge squashes which yielded a ton of the “spaghetti”. I also saved the seeds for later! Yum!

I made a creamy garlicy sauce for the squash. The sauce also had spinach and zucchini in it. After it cooked, I added some of the squash. When the squash got plated, I grated some nice parm on top! Alongside is some roasted asparagus. In the middle is some bread and leftover garlic bread. I ate everything on my plate and did not have any bread. Scott thought he was going to go back for seconds but realized he was full and decided to hold off. :p

Now I’ve got to get ready for SF class. I debated about going because I have so much to do that I’m feeling a bit overwhelmed. But then I would feel guilty if I don’t go. :choices: Oy, what to do! I’ll figure it out, I guess. See you tomorrow guys!

  1. i love spaghetti squash! YUMMM! So amazing for dessert too! :) Aaaand it’s DIVINE w/ some rice parm and BNUT squash! Mmm! Delish :)

    I’m a Yogi all the way and the more you do the stronger your shoulders and core will get! And your back, too! I can rock a plank forever :) (LOTS OF PRACTICING TO GET THERE THO!) Night!

    Julz, never thought about it for desert, now my brain is swirling with ideas!

    Lauren, most of the time I publish the recipes. I just need a little bit of time to work out the kinks. I’ll post the spaghetti squash one for sure!
