October 21st, 2008: Lunch and Dinner

Hi guys! As usual per Tuesday nights, I’m trying to get this post up while Scott takes care of the trash. :D I did get a lot accomplished today but not everything. I’m okay with that, tomorrow is a new day!

Last Stand of the Leftovers

Before lunch I got two loads of laundry done, emails written, and some brainstorming done for upcoming posts and holiday activities. I love this time of year! Not only because of fall and the cool weather but because of the holidays and all the celebration and food that goes along with it. Makes me feel all fuzzy. :cheerful:

For lunch, I made a quick chicken salad out of two leftover chicken legs. I mixed them with some of the leftover savoy cabbage and some spinach. Added two wee spoonfuls of mayo and S&P. Put the salad on omega 3 bread that was lightly toasted. On the side was some leftover roasted sweet potato and in the center is some carrots, cucumbers, and hummus. Can’t get enough of that hummus! I ate all of my sandwich, all of the sweet potato fries, and most of the stuff in the middle. I had the cucumbers plain, didn’t care for them dipped in the hummus.

After lunch, I cooked some bacon that had been sitting in the fridge. Chopped that up and froze it to use as bacon bits in the future. Did some more laundry, including sheets. Once the bed was dry (because I febreezed it), I put new sheets on. I thought about breaking out the flannel but decided against it and put regular sheets on. But I did pull out the electric blanket and got that on the bed. Okay, technically Scott pulled it out and I put it on the bed. It was stored away in a closet and I didn’t feel like digging it out. Because he knew I had been cold a few nights going to bed and I had wanted it out, he went and got it for me. Awwww

Pretty soon it was time for us to start getting ready for MT.

I needed a snack but didn’t want cereal. I needed something with a good chew to it.

I decided on the Chocolate Brownie Clif Bar. It was okay, I think I prefer the chocolate brownie Z bar over this. It served it’s purpose though. It provided a nice chew and got me through MT just fine. I’m always amazed at how well Clif bars curb the hunger and get me through a tough or long (sometimes both!) workout.

MT tonight was hard! I was having trouble with some of the combos, not because I wasn’t getting the move but because I was having trouble doing the combo with Scott. He was my partner today and sometimes it can be such a challenge working with him. He is so much taller than I am and his legs are so long that when he kicks there is still a huge distance between us. And for me to close the gap in order to punch or kick can be difficult. Today was one of those days. Meh.

We came home from MT and took Rocky for a quick walk. Ooo it was chilly! I had to stick my hat on and Scott had to put on a heavier jacket. I took a super quick shower and then started dinner. I had some swordfish steaks out but wasn’t quite sure what I was going to do with them. I finally came up with a nice tomato sauce and poached them in the sauce. I made some mini penne and some garlic bread to go on the side. My plate, I swear there is some fish there! It’s just covered by sauce. I had a small scoop of penne (1/2 cup?), one swordfish steak (small), two wee pieces of garlic bread and sauce covering the fish and pasta. I ate both pieces of bread, most of my fish except for a few bits and left a few bites of my pasta. It was yummy!

Now I’m off to finish (or try to!) the Pens game from Monday night and then to bed to catch some ZZZZs.
