September 8th, 2008: Lunch and Dinner

Sorry I didn’t get this post up yesterday. I worked until 8:30 and that combined with PT earlier resulted in my wrist being very angry with me. I didn’t have it in me to type out post. But recapping…

After PT yesterday I was starving! Again, not tummy rumbles but more of the empty gas tank feeling. I showered quickly so that I could get down to business of eating lunch!

Along with some leftover grilled veggies from Sunday I had a half a pita with WF roasted red pepper hummus and sliced up cucumbers. My veggies were three potatoes and green peppers and onions. I didn’t have any of the eggplant. I also had a bite of chicken sausage to confirm that I for sure did not like it. And off of Scott’s plate, two bites of kielbasa. Mmm! Grilled kielbasa is my favorite!

My lunch didn’t fill me up quite like I wanted so I had an apple afterwards. I ate most of it and only left about 3 slices because by then I was full.

After lunch I got right to work. I was looking to get a project wrapped up so that I could have the rest of this week to do some things around the house. Around 5pm, I put dinner in the oven and let it roast for about an hour while I continued to do some more work. I love one pot meals!

Dinner was a roasted bone-in chicken breast with some roasted veggies. I like adding lots of different veggies to the roasting pan, that way the main dish and side dish cook together and I don’t have to dirty other pots. The veggies are carrots, green beans, and sweet potato. I also tossed in some mushrooms for Scott. I ate all of my chicken and all of my veggies. Went back in for a second helping of sweet potato and then picked at Scott’s leftover sweet potato. I was hungry! I put a wee bit of butter on the sweet potatoes.

After dinner, more work. I finished work and took Rocky out for an evening walk. Then I went straight upstairs to bed to read. I finished my book, Odd Thomas, and started reading my new Titanic cookbook. Then I went to bed because I was exhausted!
