Comfort In Cheese

I am so happy it’s Friday. This week had me totally off balance. I couldn’t remember what day it was and then once I did realize which day, all I kept thinking was, “Crap that’s it!”

Ever have one of those weeks?

Even though I was messed up on days, I knew and I’m pretty sure my body knew that it was pizza time.

Again, I kept things simple, familiar, and comforting this week.  It was a his and hers style because we had different bases though our toppings were the same.

I had a spinach and sun-dried tomato base.  Sometimes, the sun-dried tomatoes cause the roof of my mouth to get sore.  I have no idea why either, it’s a bizarre little side effect.  This week I wanted to see if I could stop that from happening so I reconsituted the tomatoes in some hot water first for about an hour before I made the spread.

This worked like a charm! The spread naturally was a bit more moist but that didn’t take away from the flavor at all.

Scott’s side had regular pizza sauce and our toppings this week were:

  • Spinach and feta chicken sausage
  • Red Onion
  • Shredded Carrot
  • Banana Peppers

All on homemade crust.

It might surprise you, but I never used to eat the leftovers.  Scott would have the leftovers on Friday for lunch.  Lately though I have been all about leftovers.  The pizza has been big enough that we can easily get two meals out of it. Score!

I’m currently counting down the days until hockey starts because I am itching for some action.

  1. I used to be the same way with leftovers. I really didn’t like them. Now though, I feel like I made such good food that I want to eat them! And I mean that good as in good ingredients. It makes all the difference. I had a short week that felt like it wasn’t going to end! It’s been a great weekend.

    I never used to eat pizza leftovers either until I realized that if you heated them up in an oven or a toaster oven they were fine. Never a microwave.
