Quick Meal: Smoked Salmon or Lox Sandwich

At OHC sometimes we need meals to be speedy.  Either because we are super hungry and need to eat NOW or because it’s late and we need to get something in our bellies quickly.  Either way, we need food and we need it fast.

Smoked salmon or Lox is great to have on hand just for such occasions.  One of the easiest and quickest things to do with it is to create a sandwich.

You only need a few ingredients to make a great smoked salmon or lox sandwich.

  • Chewy whole grain bread
  • Smoked salmon or lox
  • Red onion
  • Lettuce
  • Tomato
  • Cheese (parmesan or sharp cheddar work great)
  • Sandwich spread

First start by making the sandwich spread:

Smoked Salmon Sandwich Spread

  • Greek Yogurt (I prefer 2% Fage)
  • Capers
  • Dried Dill
  • Ground Black Pepper

The amount depends on how much sauce you like and how many sandwiches you are making.  I typically use:

  • About three heaping spoonfuls of yogurt.
  • Two spoonful of capers.
  • Tablespoon of dried dill
  • Pinch of pepper

Mix and let sit while you assemble the sandwich.

Toast your bread and then layer it up with all of the ingredients!

If you are doing a traditional style sandwich, with two slices of bread, live a little and put the sauce on both slices!  Finish by adding lettuce, tomato, onion, cheese, and the smoked salmon.

Or go fancy and make open faced sandwiches!

Just sprinkle a little more fresh ground black pepper on top before serving.

This quick meal has everything:

  • Whole grains from the bread
  • Veggies
  • Protein
  • Healthy fats and oils

It’s quick and filling. Plus it’s easy to get on the table fast when you and your family need to eat something now!

MMMMM! I enjoyed sampling from a classic smoked salmon platter at a party the other night: smoked salmon, a creamy dip, red onions, capers, and crackers. I want to buy some smoked salmon for myself but hesitate because I assume it’s expensive. Any tips on a good affordable brand?

  2. You know I never keep smoked salmon around the house – but that’s because I’ve been spoiled by the beauty of West Coast salmon. Now there’s no going back! ;)

But yeah, when I do have it, I like it basically how you made it but on a bagel. Delish!
