Pizza Thursday Report for February, 25th, 2010

Bistro Style!

I decided to changes things up a bit with pizza this week.  I wanted something “fancy” and something end-of-the-week worthy.  Many times I load a lot of veggies on my pizza because I love veggies.  But also because I think I need to in order to get my veggie quota in for the day.

I am teaching myself that this is not needed.  I eat plenty of veggies.  PLENTY.  Having just a few at dinner is A-OK.  This pizza is helping me get there.

At a recent trip to Whole Foods I purchased some in-house-made chicken sausage with feta and spinach.  I know! Doesn’t that sound amazing?  Well it smelled amazing as I was cooking it up.  I let this be my inspiration for this week’s pizza.

Bistro Pizza OHC Style:


  • Spelt Crust
  • Pizza sauce (just a touch, not too much)
  • Shredded moz
  • Feta
  • Spinach
  • Red onion
  • Sundried tomatoes
  • Spinach and feta chicken sausage

I cannot even tell you how fantastic this pizza was.  First of all it smelled off the hook as it was baking on the pizza stone.  And secondly, both of us couldn’t stop talking about how amazing it tasted.  Holy shiz guys, this was one of the best pizzas we’ve had yet!

Thank god it turned out to be a thinner crust this week so that I could have three pieces and stuff my face properly.

This is the wine we tucked into after dinner and once we were snug on the couch.  Hooray for Thursdays!

  1. I absolutely LOVE WF’s housemade chicken and turkey sausages. They are loads more flavorful and moist than most non-pork sausages and people get surprised when I tell them a dish was made with turkey/chicken sausage. My latest discovery – their new Tuscan-style chicken sausage. It was a close approximation of the sausages we cooked on our honeymoon, just healthier!

    Yes! I would love to see a recipe for spelt crust. Or really any crust- I tried a whole wheat one and it turned out crap. What’s your technique?
