September 6th, 2009: Laboring

Hi gang!  I did indeed make dinner on Saturday night for us.  A lovely fish supper!  I didn’t think Scott would be hungry but I forgot about his dude metabolism so of course he was hungry.  While we were at WF on Saturday, they had some wild caught kind salmon on sale and we decided to give that a try.  We’ve never had it before or at least we don’t think so.

Salmon and roasted veggiesI did a really quick marinade on the salmon:

  • OJ
  • Grated garlic clove
  • Soy sauce
  • Honey
  • Olive oil
  • S&P
  • Garlic powder, red chili flakes, and chili powder

Along with the salmon we had some roasted zucchini and asparagus.  Oh my goodness this salmon was so good!  Tender but very meaty and filling.  But the salmon was like butter and just melted in your mouth.  Normally when we have salmon it’s wild caught Alaskan sockeye salmon.  This was a whole different ball game and so tasty!

After dinner, I made myself some tea and headed up to bed to read.  I had some stress reliever tea from Tehku.  I can’t wait to buy more of this stuff!  Just smelling it sends me off to sleepyville.  My pic is missing in action.

I was in bed early because I had to get up and get moving for my run!  I got up at 6am and took care of Rocks.  I was a little cranky because it got lighter out later than usual.  I had been able to head outside by 6:30 and now it was 6:45 or so before I could go out.

I kicked out 6 miles, whooo!  It wasn’t so bad although I could feel my hamstring get tight.  The same one that bothered me after my last half.

chocolate soymilkI had some CS and then back out with Rocks for his walk.  When I got back home, I stretched and foam rolled the heck out of my legs.  I don’t want to have another injury for this race!

coffee and yogurtAfter showering it was time to refuel and oh man was I looking forward to some yogurt!  I had some fage with homemade granola, a sprinkle of dark chocolate chips, and a bit of jam to sweeten it all up.  So so good, I wanted more!  It wasn’t long after breakfast that I headed into the kitchen and got started on dinner prep.  I got some chicken in a brine, prepped and washed some veggies, got veggies for Rocky’s veggie mix started, and got the rest of what we were having for dinner ready to go.

After all that was done, Scott was up and about.  We chatted for a little bit and then it was time for me to make some Sunday breakfast.

Smoothie, pancakes, and sausageI kept it really simple.  I heated up some pancakes that I pulled from the freezer, some chicken sausage, and made a smoothie!

  • 1C SO Delicious coconut milk
  • 1C OJ
  • 1C US cranberry juice
  • Kale
  • 1 carrot
  • 1 banana
  • Frozen mango
  • Frozen blueberries

YUM YUM!

Once the kitchen was cleaned up, Scott headed out to do yard work and mow the lawn.

grapes I grabbed a bowl of frozen grapes and headed into the office.  I decided to work on that training program I have to get through for this upcoming transcription job.  I finally finished it just as Scott headed back inside.  Thank goodness that is done!  Now I don’t have to worry about it anymore!  I hate having stuff like that lingering over my shoulder.

Chips and dipWhile we discussed getting dinner started, we proceeded to stuff our faces with some multigrain chips and con queso dip from WF.  Happy holiday weekend!  When the super yummy food comes out to play. :p  If you like cheese, this dip is so good!  And a total indulgence, just be forewarned.  We haven’t had any in ages and decided to pick some up for fun. :D

Dinner was a cookout!  Hooray!

Corn, veggies, chickenAnd a little piece of grilled kielbasa hiding in the corner.  Dinner was fantastic!  I didn’t eat all of that, as that is a lot of food.  But I did eat most of it.  Mmmmm

After dinner was kitchen clean up and showers to wash away all the smoky smell.  Ew.  And then time to finally relax on the couch.

White wine vegan chocolate puddingA glass of wine, some vegan chocolate pudding and finished off S3 of Venture Bros.  Great night!  Then I headed off to bed because I was worn out from working all day. :p

  1. Oh my gosh, I LOVE those owl plates and bowls! They’re so cool. Great job on the 6 miles, too. All your eats look delicious, too. It reminds me that I actually need to cook more, haha. Have a great day!

    And that smoothie sounds delicious. I think it’s time to get my hands on some of that So Delicious coconut milk. I keep meaning to try it, because I keep hearing how good it is.

    • Hi Ina and thanks! :D The coconut milk is actually only okay. It’s good in stuff but to drink straight, it’s not quite as thick as I expected it to be. Nice for a change but won’t replace my beloved soymilk! :p

  3. I have the same problem when I try to photograph chocolate pudding. It just looks like yuk, but tastes great. Try some whipped cream, or a cookie for contrast. But the salmon recipe is what got me. I beg you to try the salmon without so many coverups. It’s a great tasting fish; it deserves to be allowed to be itself. That having been said, I enjoy salmon by using a gravlax cure (salt, sugar, black pepper), but only for fifteen minutes. This way I get some kind of mild cure, but dinner still tastes like salmon. Cook no longer than the inside remains dark pink (i.e. rare).

    • Hi Michael! I actually prefer my salmon to have something else going on aside from itself. Yes salmon is great but I like to liven the party a bit! Everyone is different and we all have our own tastes. :D I guess you didn’t care for my chocolate pudding picture. :lol: Oh well it was tasty!

  4. That corn looks so good — I’m such an addict to corn on the cob in the summer and make Ted start eating it when it first comes out, even with it’s still kind of crappy.

    Now, as someone that lived in Texas for 10 years, I must tell you that real queso never comes pre-processed like that in a little cup! J/K :)
