Hey gang! WHEW I am one tired sister! Lemme get this out to you super quick so I can get my pretty self to bed!
Last night I was still a bit empty feeling but did not want another slice of pizza. Instead I had some frozen grapes.
I got up bright and early this morning for some last minute whatever before heading out to pick up my mom (we meet her halfway between our house and hers, and bring her back here. ). There was breakfast full of oats for fuel!
Basic oats with blueberries, unsweetened coconut and chopped walnuts on top for extra punch. After breakfast we left to get my mom.
And the rest of the day consisted of us being in the car. It’s two hours to the midpoint and two hours back. Plus stops along the way for potty break. I snacked on a small handful of trailmix in the car on the ride back. My bellah was rumbling!
Once home, I got busy making lunch.
Salad!
- Chopped red leaf lettuce
- Chopped chard
- Tomatoes
- Cucumber
- red onion
Drizzled with a yogurt ranch dressing.
Cantaloupe! What what! Haven’t seen cantaloupe in ages.
And there were chips because we are on holiday and proper holidays require chips. These were parmensan garlic kettle cooked chips by Archer Farms. Not too shabby tasting either!
No smoothie because it was late (4pm) and I just didn’t feel like pulling out the blender. I kicked everything and then had more cantaloupe right out of the container like a savage. I was hungry! That thing in the middle is chicken satay from WF that my mom was eating. We picked it up last night during our run over. Scott had some too but I did not. I was all about the ‘loupe!
After lunch I chatted with my mom for a bit. It’s the first chance I’ve had to really talk with her about this website and all the positive things that have come my way because of it. And also about my healthy eating and weight loss.
Then we went shopping because that’s how we do on vacation. Garden Ridge! It’s sort of like a Big Lots or Odd Lots but bigger and better. I actually got some very nice things for Christmas, crazy! And some cutie fall things too.
When we got back home, I put together dinner. Easy peasy, fish and veggies!
Salmon that was marinated in:
- Juice of 1 orange
- Juice of 1 lime
- Dash maple syrup
- Teriyaki sauce
- Green onions
- Parsley
- S&P, garlic powder, chili powder
Baked at 400 for about 7 minutes. YUM! Pepperjack polenta (my mom hasn’t had polenta before), and some roasted asparagus.
I cleaned that plate and went back in for more asparagus. Mmmm mmmmm!
Now I’m off to bed because I am dragging like mad. Till tomorrow gang!

ha -i haven’t seen a cantaloupe in forever as well….it’s been all about the peaches and plums for a while for me…
