September 1st, 2009: Take two

Hi gang!  First of all, a big happy blogversary to OHC!  Who is officially one year old today, wooot!  Because the new work situation has thrown a curve ball at me, I didn’t get a proper post made up.  I plan on celebrating and talking lots of things soon!

I got up at buttcrack-thirty this morning and got Rocky taken care of.  Then I dressed in warm clothes :o, pants and a long sleeved shirt for my run.  It was a gloriously chilly morning and I loved it!  My ears even got a little chilly, I may have to look for my fuzzy earband warmer thingie.  Wow!  I wonder if it will last?

I did four miles this morning and felt like I was cruising along sweetly.  I guess that I wasn’t though as my pace was a bit slow but whatevers, I had a good time and really at the end of the day, isn’t that what’s important?

I had some CS, bundled up even more and took Rocks out for his walk.  By the time we got back home, it wasn’t even 8am yet, sweet!  I stretched, showered, and then did a very crazy thing.

I pulled out my thick comfy robe and slapped that on!  I know!  But it was seriously that chilly this morning.  Brrrrr!  For some odd reason Scott forgot to make coffee and set the timer this morning, so breakfast had no companion.

Peachy!  Two peaches in some warm and creamy oatbran.  After a bit I could finally go back in for some coffee.

A load of laundry in the wash and it was time to get started on some work.  I am doing this tape that while perfectly fine, seems like it’s taking me forever.  It’s clear and the people speaking are fine, but man is it dragging on!  I felt like I was stuck at 45 minutes left forever today.  I finally had to take a break and call lunch time.

Lunch was sort of lame and sort of okay today.  The salad was a little lame but the smoothie was fantastic!

  • Mixed greens
  • Mango and agave granola
  • Cucumber
  • Shredded carrot and parsnip
  • Cranberries
  • Peanuts

Honey, balsamic, and olive oil on top.

  • 1C carrot juice
  • 1C US cranberry juice
  • 1C water
  • Kale
  • 1 small beet
  • Frozen blackberries
  • Frozen mango

Blended till wonderful.

I’ve had this salad before so I have no idea why it seemed so pathetic today. :p  I only had a few chips as what I really wanted was fruit.  I compromised.  I cleaned up the kitchen and worked some more.  Then I took an apple break.

For a red delicious which was perfectly crisp and tasty.  I actually still felt a bit empty though and before MT class, I had a small bite of one of my oat bars. Very small bite!

After MT class we hit up Sam’s for some much needed greens and frozen fruit.  And back home for another go at chipotle salmon!

This time I left out the pineapple, I think the citrus was too strong and broke down the salmon last week, which is why it was mushy.  Not today!

Salmon

The marinade had:

  • 1 chipotle pepper + some sauce
  • Teriyaki sauce
  • 1 garlic clove
  • S&P, garlic powder, and chili powder
  • 2 chopped green onions

Except for the onion, everything blended in a food processor.  Add the onion in and stir.  Baked at 400 for 5 minutes.

Asparagus and parsnip

Roasted veggies!  Parsnip and asparagus.  The parsnips were a bit over done but still turned out very yummy.  Especially when dipped in ketchup (meijer organic).  Yeah, parsnip fries!

Fish, veggies, and rice

Ta-da!  With a very small scoop of jasmine rice.  The bestest dinner!  Hooray for Fish Tuesday!  Now I’m off to read in bed with my mush face.

  2. Yay happy blogiversary! I am so jealous of your chilly weather. I know I’d be griping like crazy if I was there, but it definitely sounds appealing when it’s 108 degrees here! I’m sweating buckets just walking to my class. I always pray I don’t stink if someone has to sit next to me. Ha!

    Your dinner looks fab. Parsnip fries? Gotta try those!
