August 28th, 2009: Bug eyed

Hi gang!  I did indeed have wine and dessert last night.

YUM!  This is my second glass of red and also some frozen chocolate yogurt and 1 wee scoop of Jeni’s bourbon butter pecan ice cream.  Delish!  I have come to the realization that on Thursday evenings two glasses of wine are just too much for me.  I’ve worked out hard that day (longer run + a bootcamp style class) and two glasses just puts me over the edge.  A slightly bigger 1st glass is all I need.

Thankfully wine did not affect my sleep and Rocky let me sleep in till 8am!  Wooot!

When I came downstairs this morning I saw that Scott had organized the office so that my new computer was in place and my work computer was now off on its own with its own desk.  Wheee!  Pics to come as soon as everything is up and organized a little more.

I was starving when I woke up this morning, so I immediately got started on breakfast.

Coffee and oats

You know it!  A peach and a nectarine this morning with wonderful coffee love!  I ate breakfast and did some emails and work things.  Then after breakfast, I got dressed and took Rocks out for a walk.  When we got back home, laundry got started and I headed into the kitchen for some lunch.

I kept it super easy today and made an appetizer plate. :p

Hummus and crackers

Homemade hummus.

  • Chickpeas
  • 1 garlic clove
  • Roasted red peppers
  • Salt, pepper
  • Garlic powder
  • Cayenne pepper
  • Hot sauce
  • A little bit of olive oil

All in a food processor till creamy.

  • 1.5C US cranberry juice
  • 1C carrot juice
  • .5C water
  • Kale
  • Blueberries
  • Raspberries
  • Mango

I enjoyed everything and the hummus was just okay.  I’d rather have someone make me hummus at this point.  I wanted something to dip veggies in, I was a bit desperate so I decided to try my hand at hummus.  Like I said, it’s okay but nothing fantastic.  Pretty awesome color though!

After lunch I cleaned the house and then I got started on some work.  UGH! This tape makes me want to rip my hairs out.  The quality isn’t so good and one of the people talking is a constant, “Um, so I guess, well I said, um, so I said, uh, yeah, so I said okay.”

I’ve still got an hour left of that to go.  I did 1/2 hour of it, which took me a while because, like I said, the quality of the tape isn’t good and whoa I had to stop.  My eyes were starting to bug out of my head from staring at the computer and it was draining all my energy.  I headed upstairs to take a shower and put on some of my fave jammies.  I poured a seltzer with a slice of lime and kicked it checking mail for a bit.  Then I heard Scott’s bellah rumble and realized that maybe we should eat dinner. :p

Thank goodness for leftovers!  All I wanted was a big enchilada mess and that’s what I had!  But first I snacked on a few baked salt and vinegar chips.

I loaded up a bowl, added some extra pepperjack cheese, and salsa, and heated that bad boy up!

Clearly my eyes were bigger than my tum because I did not eat all of that.  I tried though!  Points there! ;)  Now I’m going to get some relaxing in before I call it a night.  I may read; I’m so close to finishing my book! And I may have another snack, it’s that kind of evening!

  1. thanks for the comment on my blog addiction post. It was funny because I love when people take the time to post a long comment, it means they actually ahve something to say! I do read all comments, regardless of the number because it usually means that it’s a topic which struck home for some people.

    I’m always looking at your lunch thinking I don’t know if I could digest that many fruits and veggies in one sitting. It’s awesome!!

    I’ve also found that homemade hummus is one of the few homemade things fo rme…that just isn’t as good as what I buy
