Hey gang! So just when I think I’ve got some time to get a handle on website stuff, BAM in come some projects. Not that I’m complaining because Hello, dinero, I love you! But life always seems to sort of throw things off kilter just when you think you’ve got yourself situated.
Anyways, moving along. I needed something quick for dinner this evening because I’ve got to bust butt and get some stuff done and get other projects started. Thankfully I had the forethought to make a ton of veggies last night to use for today’s supper. I decided to make a quick sauteed veggie dish over brown rice.
In addition to last night’s leftovers (onions, peppers, zucchini, and eggplant), I added in some carrot, bok choy, and cabbage. Along with some white beans I cooked yesterday. Everything got sauteed in a large skillet with some teriyaki sauce added for extra flavor.
The mixture was then spooned over brown jasmine rice. YUM!
My desktop computer is acting like a dinkus head and technology is just basically kicking my butt right now. Time tell it to eff off and kick it’s butt! If the night keeps going like this, there maybe chocolate in my future. Later lovlies!
This looks amazing – and such an easy recipe! I think I will be making this very soon. I will let you know how it turns out.
Natalie, I love when you comment! It makes my day.
You maka me hungry!! Seems like it is pouring all over blog land all of a sudden… At least your “pouring” is a positive thing, right? Technology can just kiss my ass. My work computer went a little wacko the other day and scared the bejeezus out of me. I hadn’t backed up in over a month (guilty swallow). But, everything seems to be fine.
Funny how that happens! Just when you think you’ve got it all under control, life takes a turn on you. Sounds like its for the good though. Hope everything works out hun!
DINKUS – love that word
Mmm teriyaki sauce adds such delicious flavor!
Hope you got your technological issues sorted out!
