July 26th, 2009: Reinvented

Hi gang! Woke up this morning to brutal shoulder and neck pain. OY! It caused me to debate whether I was going to head out and run.  I decided to run because it was a gorgeous day and I didn’t want to miss a Sunday morning jog!  I only 3.5 miles today but I’m cool with that.

I had a little bit of CS and then headed back out with Rocky for a quick walk around the ‘hood.  Back home, I changed, stretched, and wrote up last night’s dinner post.  Finally it was time for coffee and a small snack!

Coffee, yogurt, and granola

Chocolate granola and yogurt (2% Fage) with some cranberries.  Delish!  I brought my laptop into the TV room and surfed/read blogs while watching some Food TV.  Guy was on making some killer crab cakes!  I putzed around for a bit till my laptop was almost out of juice.  Then I got up to make some Sunday Breakfast!

Scrambled eggs with veggies

Scott said he was craving eggs but didn’t want a fritatta.  No problemo! Remember my roasted veggies from last night?  I purposely made a huge batch so that I could chop up the left overs and mix them with scrambled eggs today.  Topped with some Cholula after the pic was taken.  YUM!

I also used some of the butter leftover from our night at Matt the Miller’s, spread that on some whole wheat bread and toasted it up in the skillet to become crispy delish.

To wash everything down, MimFAUXsas!  Pineapple juice + OJ + Lemon/Lime Seltzer = delicious breakfast faux mimosa!

Eggs, juice, and fruit

I had one whole slice of toast and it was awesome! Whole grains do not make me feel or look as bloaty as white bread based stuff.  Nor does it make me feel sluggish.  Bring on the grains!

After breakfast, I did some prep for things to use through out the week like shredding up some veggies.  I also cooked up a lovely rhubarb and blueberry sauce.  Now to decide what to do with it!

Sunday is flying by way too quickly for me, it’s going to be Monday all too soon.
