July 31st, 2009: Finish strong

Hi gang!  I have no idea what came over me today but I was famished!  I contemplated a small snack this afternoon but nixed that idea and just made an early dinner.  Good thing too because I was about to chew my arm off.  Apparently my run last night took more than I thought!

Tonight was a leftover night because I’m pooped and it was easy.  Plus Scott is going to be interviewed tonight on a podcast!! So I wanted something quick in order for him to have plenty of time to prepare.

Zucchini

First up, roasted zucchini!  Lord but I love zucchini.  More than I love asparagus.  I could easily eat zucchini everyday and be a very happy girl.  This had:

  • Olive oil
  • S&P
  • Garlic powder
  • Curry powder
  • Soy sauce

Roasted at 400 for a few minutes.

Sweet potato fries

Sweet potato fries!  Covered in olive oil, chili garlic sauce, garlic powder, and seasoned salt.  Roasted along side the zucchini.

July 31st, 2009: Restful

Hi guys!  I had thought about running this morning but as I was going to bed last night at 12:30am (way past grandma’s bedtime!), I decided to play it by ear.  When I got up at 7am because Rocky was pitching a fit, I noticed it was raining.  Coupled with the fact I was drag-ass tired I decided to go back to bed.

Something I almost never do for multiple reasons.  But today I was just too dang tired!  I tried my best to sleep in but phone calls (totally annoying) and Scott moving around too much caused me to get up just shy of 9am.  I technically did get extra sleep so I’m calling it good.

Coffee

A cup of coffee joined me as I headed into the office for some nice face time with the computer.  I read some blogs and realized my email and site were down for a bit.  Thankfully the issue seemed to be resolved quickly and I was then able to start on my race recap post.  I needed some fuel to get me through.

Dublin Irish Festival Four Miler

Hi guys!  Yesterday was a first for me in so many ways I don’t even know if I’ll be able to convey it all!  It was my first race since the half in May. To quickly recap, I got injured during the half and was off running completely for a while.  I’ve only been back to running since mid-late June.  I had to start at 2 miles slowly.  And then start working my way back up.  That’s where I’m currently at, working my way back up and adding miles.  It’s very frustrating process for me right now and it’s leaving me with no motivation for increasing miles and working hard to get back to 13.  I decided I needed some motivation.  One thing I thought would help would be signing up for a race!  I found the Dublin Irish Festival Four Miler and knew that would be perfect.  I could do four miles and it wouldn’t take me long to be able to work up to four miles.  And I was right, it didn’t take me long to handle four miles.  However, my pace is crazy slow and I’m clocking in at 12-12:30min/mile.  I am not a fast runner.  During my peak 1/2 training, I ran a 10:30min/mile and I was happy with that.  I ran an 11min/mile on long runs and I was happy with that.

“I ran a four mile race this evening.”

Me and Rocky “OH MOM! I can smell all four miles right here!  All four!  Four miles is awesome! Mmmmm smells!”

Me and Rocky “Lemme see, lemme see, lemme see, lemme see.  Lemme seeeeee!!!”

Rocky “Oh yeah dawg, my mom just ran a 4 mile race and kicked some Irish booty!  What’d you do today?”

Rocky “PUNK!”

July 30th, 2009: Race Day gear up!

Hi lovelies!  Ever have one of those days where it seems like you can’t connect with other people because they act like you are speaking a foreign language?  And it makes you want to smack your head on your desk?  Yeah, I had that yesterday.  :crazy:

Anyway! On to better things!  Dinner last night was leftovers.

Salad, guacamole, enchilada

Leftover salad from lunch (You didn’t think I would throw it away did you? ;) )and leftover veggie enchilada which apparently had a run-in with the ugly stick while I had my back turned.  I have no idea what happened, I found it like this.  And in the middle quick guacamole which is really just mashed up avocado, S&P, garlic powder, and lots of chili garlic hot sauce.  YUM!  With FoodShouldTasteGood (great chips, poor name!) multigrain chips that I adore.  I can’t even eat regular tortilla chips anymore because these have such great flavor, everything else is bland.

After SF class, I went straight to bed with some seltzer and my book.  I read for about 1/2 an hour and called lights out at 11:30pm.  I had hoped to get to bed earlier but that was not to happen.

July 29th, 2009: Headless

Whoa guys! It is has been a crazy busy day! Trying to get stuff done for one person while trying to maintain correspondence for blog related things (some of you I still own emails too!), and now taking on another transcription project for a friend.

At least I’m getting paid somewhere in there! :p  Anyway, to eats!

After working for a little bit this morning getting caught up on posts, I had some breakfast.

Yogurt, granola, and coffee

Yogurt and granola!  With a dollop of rhubarb blueberry sauce (I am using and abusing it) and 1/2 a banana sliced up.  YUM! With some coffee and cream.  I didn’t even finish that bowl.  I had a few bites and was full.  Weird!

Then I chatted with you all via Twitter, aren’t you loving it? :D  And did some work and executed step one of house cleaning.  Four loads of laundry later, it was time for lunch.

Review: Under Armour Running Hat

Me, race day Hi gang! The majority of you were interested in also reading about some workout gear reviews here at OHC, so here we go!  First up is one of my favorite pieces of gear, my running hat made by Under Armour. The first time I wore this hat was during my first half.  I know, never do anything new on race day, right?  Well a few days before the race I realized that a hat would help keep the sun and sweat out of my eyes.  And if I hated it, then I would just toss it to Scott at some point along the way.

I know that was a poor plan but it was a few days before race day and I was desperate.  I picked this hat up at a local sporting goods shop and it came in two colors, white with a green logo or black with a pink logo.  I detest anything pink (just because I’m a girl doesn’t mean I like pink! Good grief!) so I opted for the white hat.  I love green so it worked out.

July 28th, 2009: Run away

Hi guys!  Time got away from me yesterday and I never had a chance to catch up and post.  Bah!  That makes me a little crazy in the head sometimes when that happens.

First we must backtrack all the way to Monday night!  After SF, I wanted a snack.

Banana ice cream

Banana soft serve! Which was actually not so soft serve and more like hand-churned hard packed ice cream.  I had made this combo on Sunday evening but the bananas weren’t frozen hard enough and the texture didn’t turn out right.  I put it in the freezer for another day.  It’s bananas mixed with some of the rhubarb and blueberry sauce.  Mmmmm

I also had two prunes before the soft serve hit the bowl.  Wait, what?

Then at 10:30 I hit the hay and got up bright and shiny at 6:30 the next morning.  I debated on a run yesterday and I can’t even remember why!  I ended up going out because I reminded myself that I might not run Wednesday, the day before the race.  I needed to get a run in!  I ran another slow as molasses four miles but felt awesome afterwards so score!

July 27th, 2009: Double Pow

Hi gang! So I put a call out on Twitter asking if I should make veggie enchiladas or veggie stuffed peppers for dinner.  The votes were even! The Iron Fist came down when Scott said he would like enchiladas.  I decided that for dinner this evening that’s what we would have especially since Scott was having a craptastic day.

But because I’m a talented multitasker, while I was making the filling I went ahead and made enough to stuff the peppers.

Two for one, baby.  Two for one!  I had some really nice cubanelle peppers that were asking to be stuffed with other glorious veggies.  So I did!

Off to the freezer they went and I’ll pull them out when I need a quick meal.  Once they were settled in Siberia, I pulled out the main star.

Enchiladas

Enchiladas!  I actually layered the casserole dish with the corn tortillas (Whole Foods Brand in the dairy section), layer of filling, sauce, and some cheese.  Another layer of tortillas, filling, and the rest of the sauce.  Once they were cooked through and the tortillas softened, I added the rest of the cheese to melt.  Can you tell which side is Scott’s and which side is mine?  It’s easier to layer than to fill and roll each tortilla because they are so tiny.

July 27th, 2009: Maintenance

Hi guys!  I got up this morning and crossed my fingers hoping that there would not be another oatmeal debacle because I was armed with a banana this time.  I made oats and did not add blueberries.

Instead I added some blueberry rhubarb sauce that I made yesterday.

With coffee and after the pick I swirled the sauce all through the oats.  And the oats were fabbo!  My banana was a little under ripe but it still made the oats creamy smooth.

Then I got dressed and headed out to the girlie doc for routine maintenance.  Does anyone like doing that?  I doubt it.  I think I might switch docs though.  Where I go to now is a huge office with multiple locations and lots of doctors.  I never see the same person and it feels very impersonal.  They are also an obstetrician’s office which means the only magazines they have on hand are either mom mags or pre-mom mags.  What about the rest of us?  Highlights doesn’t do it for me.  Pfffftttttt!
