June 29th, 2009: Fresh fresh

Hi gang!  Since Monday is my rest day, I decided to sleep in a wee bit and got up at 7am.  I was surprised to experience cool air and breezes this morning while Rocks was out for his morning ritual.  Such a change from the weekend!  I came back inside and worked on my dinner post.  My reward for getting that done and published was some lovely coffee.

Mmmm! I think I forgot to mention but did you notice my coffee yesterday? Apparently I was still a bit sleepy when I poured it and I used Scott’s mug! :p  Right now the creamer I’ve been using is Meijer brand organic creamer.  It’s got the best ingredients so far and tastes amazing.  Scott is still using the Coffeemate which is subpar for sure.  The downside to the Meijer brand is that it only comes in one size, very small. Whereas we buy creamer in huge 1/2 gallon containers. Yup, a lot.  I’m still researching other alternatives so that Scott and I both have a great creamer to use.

Oatmeal and coffee

I was hungry by this point so I made breakfast as well.  Blueberry oats, super simple!

  • 1C vanilla soymilk
  • Pinch brown sugar
  • 1/2C old fashioned oats
  • 1/2C blueberries
  • 1TBSP ground flax
  • 1 scoop vanilla whey powder

Mix-ins were easy today, just some shredded coconut.  Lovely!  Now that I’m revisiting my eats, another cup of coffee sounds glorious right now.

I worked on some articles and caught up on a few blogs.  I missed you over the weekend!  I also took Rocky out for his morning walk.  The sun was hot but the breeze was still cool which made for a much better walking experience.

Yesterday my leg was super bothering me and I was worried that I re-injured my right hamstring/knee area again.  Today it’s loads better and walking Rocky was no problem.  Fingerscrossed running won’t be a problem tomorrow!

Oats didn’t hold me over well at all today and by 10:30 I was dreaming of lunch.  I held out till noon and then headed into the kitchen for some eats.  Yesterday did not have enough veggies or fruit for my bod and I was looking to fix that today.

Salad

You know there was a salad.  Thank goodness I have mixed greens on hand! We so very desperately need to grocery shop. I’m trying to hold out till midweek but I’m not sure I’ll be able to!  Anyway, here’s what I tossed together:

  • Mixed greens
  • Chopped beet
  • Peas
  • Corn
  • Carrot
  • Sunflower seeds
  • A little bit of parm for some fun

Topped with a mustard-red wine vinegar dressing that I made.

Crackers

Crackers for dipping into hummus.  365 wheat crackers and Kashi roasted veggies crackers.

Scott demanded that I make a smoothie that would coordinate with his shirt today.  I tried my best.

Smoothie:

  • 1.5C OJ
  • .5C POM
  • 1C Water
  • Spinach
  • Carrot
  • Frozen pineapple
  • Frozen mango
  • Frozen peaches
  • Frozen blueberries

Smoothie amount is enough for us to both have a large glass and some leftovers because Scott likes to have a bit more than our large glasses hold.

Salad, smoothie, and hummus

Lunch was so very yummy.  While I can get through the day without these things at lunch, I absolutely feel my best when I can have a raw meal midday.  I need raw veggies and fruit at least once a day.  I prefer lunch but I will take it anytime I can get it.  Yesterday, other than some fruit at “brunch” I didn’t get much and I wasn’t a happy girl.  Now I’m much happier!

This week is a short week!  Our anniversary is this weekend and we always take vacation time for our anniversary.  Next week we have off all week.  Hooray!  I’m counting down the days till vacation starts!  No we aren’t going anywhere but I do have some fun things planned for us. :D
