June 28th, 2009: The Bird is the Word

Hi guys! Yesterday Scott and I watched a documentary type thing on the Dust Bowl of the 1930s, also called The Dirty 30s.  Whoa what a horrible thing to have to live through! Here’s a link in case you want to learn a bit more.

While we watched, we had a snack.  I made a quick trail mix to take to the seminar but we didn’t eat it then and decided to have it while watching TV.

  • Raisins
  • Peanuts
  • Walnuts
  • Corn-flax chips

I just had the raisins and corn-flax chips.  Yum!  After that was over we headed out to the deck to chill for a bit and had a fizzie.

POM + seltzer.  Scott started getting hungry so we headed inside and I got dinner going.

I have some chicken breasts sitting in my freezer that need used up before they go past their prime.  I already knew that I would be tired on Sunday and wouldn’t want to spend a ton of time in the kitchen.  That meant a roast dinner was in order!  We haven’t had roast anything for quite some time and I was looking forward to plopping something in the oven and having a wonderful dinner an hour later.  Perfect chance to use up some of those chicken breasts.  I put them in a brine early Sunday morning which had lots of things going on but the liquid was a water/apple cider/POM combo and it was hella good.

Around 5ish, I pulled the chicken out of the brine, dried it off and then made a quick dry rub for it with loads of stuff that I can’t remember all of right now. :p  Sweet potatoes, carrots, and mushrooms (for Scott) went in the roasting pan with it.

While dinner was cooking away, we played a game of Rummy which is actually our own version with a lot more rules but also a lot more fun.  One “session” probably takes us half an hour to 45 minutes to get through.  We got through one session and I had to check on dinner and get other things started too.  Dinner turned out perfect!

Also some roasted asparagus that was mixed with olive oil, soy sauce, really grainy mustard, and some garlic powder.

Mashed potatoes

Mashed potatoes per Scott’s request.  Creaminess added via greek yogurt and I used chicken stock as a liquid instead of milk.  Also added in some chopped artichokes and shredded cheddar.

Dinner time

All together now!  I did not eat that entire chicken breast! It’s just easier to put it on my plate and pick at it then to try and slice it in the roasting pan.  I had about 1/3 of it.  I also made a quick gravy (also Scott’s request) using olive oil as the fat and whole wheat pastry flour as the thickener.  YUM! I dipped a few bites of chicken in there.

When we sat down to eat dinner it was 9pm. Oh my!  I left the dishes and decided I would deal with them today.  I had no desire to do dishes going on 10pm which is when we finally sat down on the couch to chill.

Wine

Scott poured us a small glass of white and we watched TV for about 45 minutes.  Then I craweled up to bed and passed out!

  1. Can I just say how cute it is that you guys play rummy? Even cuter that you made up your own version?

    That just reminded me of another free activity Bill and I can do now that he’s on a college-student budget again!

  2. That chicken looks great :) We saw that special on the Dust Bowl too — pretty scary that there’s nothing you can really do but hide and kind of amazing that there aren’t more of them since it’s all natural.
