June 26th – June 28th: Recovery

Hi guys!  I figured it would just be much simpler (on me) to put everything in one gigantic post. :D  However the post will be light on pictures because either I don’t have pictures of some items or they are so basic we all know what they look like!  And also because it will allow for speedy posting and getting this out to you even quicker.

FRIDAY:

Friday morning I woke up bright and early at 6am to get a start on my day and with the hopes it would buy me some more time.  I would soon find out that wasn’t the case!  I went out for my run and it was glorious being out so early.  I was running by 6:30am and no one was outside except for a few people here and there.  It was so quiet and definitely not as hot.  I came back home and took Rocky out for his walk.  It was still early in the morning by this point so instead of going right up to shower, I made breakfast and sat at the computer for a little bit.  I had blueberry oatmeal and coffee.

Once Scott was up for the day, I got busy busting out some muffins for the seminar.  I made blueberry using the Berry Goodness muffin recipe from Eat, Drink, and Be Vegan.  Mondo substitutions because some things I didn’t have or didn’t want to use.  For example I think that recipe calls for a lot of sugar.  I cut it down a great deal and the muffins still turned out great.  I also made sausage cheddar muffins with a few changes and they were perfect as well.

After I was done baking, it was a quick lunch of smoothie and salad.  Then Scott and I ran over to the SF school to get things set up for the seminar.  We got back home and I cut Scott’s hair so he would look more presentable. ;)  And I made a snack of yogurt + granola + blackberries to help hold me over during the evening session.  Before we left for the night, I did snack on a few grapes for extra boost of energy.

Friday night was all knife training and tactics.  We were there for about 4.5 hours and by the end I was starved.  We headed out to dinner with some of the guys and our instructors.  We went to Max and Erma’s, which is a chain restaurant.  I had the veggie black bean burger with a baby greens side salad.  I got the burger with no bun and it had pico de gallo and guacamole on top.  The side salad was greens and sundried tomatoes with a balsamic dressing.  The meal was just meh.  My burger was dry and the salad was so basic it was silly.

We came home, I immediately changed into my jammies and crashed hard.

SATURDAY:

Coffee and oatbran

Saturday was another 6am start.  I didn’t get nearly enough sleep but I couldn’t let that stop me.  I came downstairs and had some coffee and blueberry oatbran.  I made a little extra because I knew we needed it.  I got all the food stuffs that we were bringing for the seminar together and everything ready to go.

First training session started at 9am and we went until about 12:15.  There was one small break and I ate a banana.  Then during the longer lunch break I had a PB sandwich on whole wheat (that I brought with me) and some grapes.  I drank water the entire day.  The bread made me feel a little bloaty but stayed with me throughout the rest of the day so it did its job well.

By 4pm we wrapped up training.  We stayed later because we had to get all the money situated and clean up the school.  By the time we got home it was after 5pm and already I was starting to feel exhausted!

Salad

I made us a quick salad for starters.  I was craving raw veggies like crazy.  The salad was super simple with:

  • Mixed greens
  • Cranberries
  • Blackberries
  • Almonds
  • Sunflower seeds

In a mustard and balsamic dressing that I made.  After eating salads and after having showered, Scott and I headed out to the deck to relax a bit and chat.  We came back inside for dinner which was leftover pizza from Thursday.  I had three slices!  I was a hungry girl!

We basically plopped down on the couch for the evening.  We watched Taken which was just okay and then at 10pm I went to bed and zonked right out till 8am this morning.

SUNDAY:

Which brings us to today!  I decided last night that I would just play it by ear about running this morning.  My leg that has been in recovery since my half, got tweaked a little bit and is bothering me some. And since I’ve been training hard all weekend really, I decided that today would be a rest day.

Rocky let me sleep in which I was totally grateful for! I poured some coffee and had two cookies as I sat outside on the deck reading my book.  It was a really nice morning, not too sunny and not too hot.  Perfect for relaxing on the deck.

After a while Scott got up and I made us some Sunday breakfast.

I had my two pancakes with some vanilla almond butter spread on top.  So yummy!  I already got dinner prepped this morning as well.  Now I’m off to do some more sitting on the couch.  I think I’ve earned that. ;)

  1. We watched Taken last night too!! I thought it was pretty good, but that’s because I had really low expectations and I slept through part of it. :-)
