Monday, May 18th, 2009: Need rest stat!

My lack of rest, stress, and cra-zah schedule has finally caught up to me in the way of a sore throat and slightly stuffy nose.  Meh.  I need to be in bed by 10:30 tonight!  I would say sooner but we’ve got SF class this evening so I’m not sure I could swing being in bed by 10pm.  I’m telling you so you can tell me! Bed by 10:30.

Okay, last night we watched The Princess Bride as Lorelle had not seen it before.  While watching the movie we had:

Wine

Some wine, two glasses.  Way too big glasses!  Scott was in charge of pouring and was a tad heavy handed.  We also split:

Sweet goodness

Sweet goodness

A cappuccino macaroon.  YUM!  The center filling was a bit sweet so I sort of nibbled the outer edges.  That wasn’t quite enough for me and I went back in for some chocolate chips.

I know, I was a snacking fool last night.  I’m pretty sure that I forgot to mention that I did not eat all of my fish from dinner last night.  I had three bites and was done.  It was sort of icky and super fishy tasting so I passed on it.

I was in bed by 11pm last night.  Not bad but definitely should have been in bed sooner.  I woke up in the middle of the night freezing cold.  So cold I had to turn the electric blanket on.  YIKES!  When I got up for good, it was pretty cold out when I took Rocks out for his potty run.  Apparently there was a frost warning and everything for last night.  Not typical end of May weather, that’s for sure.

After taking care of Rocks, I headed up to shower and get dressed for the day.  Then I made some breakfast goods.

Oatbran!  I almost didn’t make this because I wasn’t terribly hungry thanks to Invasion Cold but decided I needed something comforting and oatbran is just that.  Super super basic oatbran today and the only mix-in was my crack, vanilla almond butter.

Breakfast and coffee devoured, I took Rocky out for an extra long walk.  Since it was cooler, he would be able to handle being outside for longer.  We did a good 45 minute walk and it was probably close to two miles.  My knee only bothered me slightly on this walk.  I was chilly when I got back so I made some tea.

Sitting down with my peppermint tea, I got productive.  Cranked out two articles that I needed to complete, woo! Then I headed into the kitch for a quick lunch before my PT session today.

Small salad to hold me through PT.

  • Mixed greens
  • Carrot
  • Green pepper
  • Broccoli
  • Sunflower and pumpkin seeds

Topped with a little bit of yogurt Caesar dressing.

PT was quick today.  A few things on the reformer and then ultrasound and massage.  My  next appointment is for Wednesday.  *fingerscrossed* that I get the go ahead to try running this weekend.  I can’t do anything till they see me again on Wednesday.

Then it was back home to the icebox house. Crikey it is so cold in here!  It’s not super hot outside so opening the windows and what not will only bring in more cool air.  Leaving us just walking around shivering.  Then I had a smoothie to test my cold tolerance levels.  That’s the only explanation I have for deciding to drink a frozen drink.

Milkshake smoothie today:

  • 2C vanilla soymilk
  • 1C water
  • Huge bunch of kale
  • 1/2 a large carrot
  • Frozen mango
  • Frozen peaches

Makes for a green monster.  It was a pretty green though! And I had two prunes and some kashi honey sesame crackers to go with it.  I was even more frozen after drinking this!  Lord.  But I got in some extra fruits and veggies. Look for the upside, right?

Because of the icebox house situation, I decided to make some soup for dinner.  This way we’ll warm up and have leftovers for tomorrow.

My kale needed used up as it was starting to just be shy of turning on me.  I made a chicken stock based soup with veggies, beans, and some chicken sausage.

Yum!  And some multi-grain bread with a little butta.

The soup had:

  • Onions
  • Green pepper
  • Chopped tomatoes
  • Carrot
  • Zucchini
  • Kale
  • White beans
  • Spinach and feta chicken sausage
  • Sundried tomato chicken sausage

Such a great soup!  And perfect comfort food especially since we were chilly and I’m a bit under the weather.  I have some time, so I’m going to read for a bit before SF class.  Till Tuesday!

Hope you had a great day. I have some Kale and stock that I need to use up as well, only I also have a few sweet potatoes that are reaching their turning point in a few days, so I am thinking Kath’s Nuttty Sweet Potato Kale soup is in order.

Hope you are having a great week. PS- Be sure to check out my giveaway if you get a chance! :)
