May 5th, 2009: Dinner

Hi guys!  Errand running went well!  Before we left, I had a very wee amount of yogurt and chocolate granola.

I wasn’t too hungry but didn’t want to get caught being out and starving.  I think it worked a little too well though!

I didn’t find anything at Payless which bummed me out. I’m looking for some nice dressy brown sandles. Everything there had very high wedge heels. Lordy are we going back to the 70s? No wedge heels and most especially don’t put rope on the heels.  Goodness.  Old Navy was much better! I got some shorts and some dress pants, hooray!  I would have looked around more but someone was huffing and puffing so I cut it short.  Sam’s was quick and painless.  Then it was home, whee!

I put out some quick guacamole and chips.  I had a few, maybe 3 while making dinner.

I still stuck with Fish Tuesday but with a twist.  I made quick and easy rice dish with black beans, corn, and salsa.  Mmmm!  And the salmon, I created a chipotle glaze to go on top while it baked. It was awesome! Salmon is a sturdy fish and can handle more intense flavors.  I thought chipotle would be good with the salmon and also something a bit different.  Since I wasn’t terribly hungry thanks to my yogurt snack I did not finish the salmon.  I had about three more chips + guac during dinner.

We also opened up the last of our Summer Ale stash. Since more should be out soon, I figured it wouldn’t hurt to drink it.  So yummy!  What a great light beer.

Off to relax with my boys!  Catch you tomorrow. :D  Happy Cinco de Mayo!
