May 22nd, 2009: Dinner: Green all around

Hi gang!  Since we last spoke, I’ve done some laundry, found a cutie robe that I didn’t think I had anymore, and Scott mowed the lawn.  I plopped down on the couch for a sec and watched Giada make a sort of greenbean potato dish that was the inspiration of the side dish I made for dinner this evening.  Except mine is totally different and ended up not resembling Giada’s in anyway.  Love it!

Dinner tonight was so amazing I’m in food heaven with my food bellah-bump.

The main dish, was an open faced chicken sammie.  We haven’t had this in a long time and it was oh so wonderful today.  I made a spinach and sundried tomato pesto, light on the parm and spread that on some mini ciabatta rolls that I cut in half.  Layered on some leftover rotiserrie chicken I had in the freezer, topped that with some shredded mozzerella cheese and tossed in the oven at 400 for a few minutes till the cheese is all meltly bubbly.  Love!

On the side was the potato salad.  Roasted potatoes, roasted red onion and green pepper, and some sugar peas blanched and cut on a bias.  Dressed with a grainy dijon mustard and a few other things. So, so yummy!

I actually didn’t think I would eat all of that but I cleaned my plate like a big girl. :D  There’s more laundry I need to get done, Scott has plans to listen to a podcast, and perhaps we can fit some relaxing time in there somewhere.  Catch you tomorrow!
