April 3rd, 2009: Breakfast and lunch

Hi guys!  I’m still having trouble typing April, I keep trying to type March! :p  I got to bed super late last night (for me).  We were watching an extremely amazing Pens game (Pens vs. Calgary) and I just had to finish it to see if they ended with a shutout.  And they did!  Suck it Flames you went down in smoke.  Woot!  I could be really cheesy and talk about the Igloo estingushing the flame but I’ll spare you. ;)  While watching I sipped on another wine fizzie (wine + seltzer) that I did not finish, it was just too much.

I woke up at 7am this morning to pouring rain.  No running for me!  I snuggled back in bed till 9am.  Holy schnickie, that’s the longest Rocky has let me sleep for a long time.  I put on my robe and headed downstairs for some coffee and breakfast.  I got to enjoy another day of getting up at the same time as Scott. :cheerful:

I had some coffee and a yogurt mess for breakfast.

  • 2% fage
  • 1/2 TBSP of ground flax
  • Scoop vanilla protein powder
  • 1/2 a banana sliced
  • Cranberries
  • Bear Naked banana nut

Mmmmm!  I enjoyed that and another splash of coffee (ssshhh) while doing some officey type things.  Eventually there was a break in the rain and I decided to head out for my run.  My legs are so sore from Wednesday sprints and last night’s conditioning class.  My glutes and hams are tight.  My glutes being sore from lunges.  I don’t know if they work glutes for anyone else but lunges always get me.  OY!

Today was an easy pace day and short run of 3-4 miles.  I did 3.5 and while it wasn’t raining the wind was killer.  A few times when there were large gusts I couldn’t move but was running in place. :p  Added resistence training I suppose.

Once home I stretched and hit the shower for an amazingly long steamy recovery.  It was fabbo.  I did some more office work and then finally headed in to make some lunch.  I had no idea what to make.  We seriously need to hit the grocery store and even though I could use the veg, I was not feeling a salad.  I decided to get creative instead and it paid off!

Quesadillas!  We still have some of the WF chili con queso that needs used up.  I decided to incorporate that into a quesadilla.  Little butter spread on one side of the tortilla, medium sized skillet on medium heat.  On the not buttered side, 1/2 the tortilla was spread with the con queso.  Then layered in shredded carrot, chopped spinach, red onion, green pepper, and topped with a bit more con queso.  Heated in skillet till both sides were crispy brown.

DIVINE!  Lordy this was perfect.  Oooey goooey cheese with plenty of veggies.  On the side was a red delicious and an orange I split with Scott.  Mmmm!  I couldn’t finish all my tortilla and Scott was happy to take it off my hands. :lol:  It was so good and totally perfect for a rainy gloomy day.

I’m off to hit the grocery store!  Trying to get everything done as this weekend is going to be busy!
